Potato And Black Bean Salad Recipe

Ingredients:

* 3 potatoes
* ? a can of drained and rinsed chick peas
* An 8 ounce can of marinated and chopped artichoke hearts
* Half a bell pepper cut into small, thin strips
* 3-4 spoons of minced parsley
* 1 sliced scallions
* 1 tablespoon of lemon juice
* Salt and pepper to taste

Directions:

1. Microwave the potatoes till they're cooked but not mushy and then cool.

2. Add remaining vegetables in another bowl.

3. Peel and cut the potatoes, add to the vegetables and then add lemon juice.

4. Add salt and pepper to taste.

5. Your yummy vegetarian salad recipe is ready to serve!

French Onion Soup Recipe

Ingredients:

* 5 spoons of margarine
* 1 ? sliced onions
* 1 ? cloves of sliced garlic
* ? teaspoon of sugar
* Pepper to taste
* 1 tablespoon of all-purpose flour
* 3 cups of vegetable stock
* ? cup of red wine
* 1 tablespoon of Worcestershire sauce

* 1 teaspoon of fresh thyme
* 1 French baguette
* Thinly sliced mozzarella

Directions:

1. Preheat the oven to 450?F.

2. Heat the margarine in a stockpot and add the onions and cook on a medium flame till they're soft. Keep stirring.

3. After around 10 minutes add the garlic, sugar and pepper.

4. After the onions are caramelized, add the flour, stirring to blend well.

5. Add the vegetable stock, wine, Worcestershire sauce and thyme and bring the soup to a boil. Reduce the flame, cover and let it simmer for 10 minutes. Your soup recipe is almost complete!

6. Slice and toast the baguette.

7. Place a slice of the baguette on top of each bowl of soup and cover with mozzarella. Place the bowls on a foiled baking dish.

8. Bake till the cheese just starts to melt.

9. Your yummy soup is waiting to be eaten! Try the recipe soon and enjoy the creation.

Dyeing Easter Eggs with Onion Skins, Estonian style

We don't really 'do' chocolate eggs for Easter here in Estonia, but real, chicken eggs. Dyeing eggs for Easter is very popular, and using onion skins is probably the most popular method. Using onion peels gives you most beautiful dyed eggs, each one unique and special. Here are some photos of the process that I took few years ago.

Here's what you need to do:

* Few weeks before Easter start collecting onion peels. Yellow ones are better than red onion skins, as they give a nice colour.

* You need white eggs for doing this (this gives the shops a chance to sell specially packaged white eggs for a much higher price before the festivities).

* Take an egg and neatly put few onion peels around it:

* Take a piece of mesh/muslin/kitchen foil or even an old nylon stocking and wrap it around the egg to keep the onion peels on place. I used foil here:

* Boil as usual. Cool, then unwrap and unpeel.

Beet deviled eggs aka Beetroot devilled eggs for Easter brunch

Beet-pickled eggs have made quite a few appearances here on Nami-Nami. First in April 2007, then again in March 2008, but in a marbled form. The ruby eggs were present on our Easter brunch in 2009, and ruby-red quail eggs were present on our Easter brunch in 2012. Probably in 2010 and 2011 as well, I just forgot to take a photo of them. If you read Estonian, then you saw them in my recipe column in the March 2013 issue of Kodu ja Aed ("Home and Garden") magazine as well:

Yet it had never occurred to me to make deviled beet eggs until I came across this post on The Kitchn (well, I actually first spotted the recipe on Pinterest, where I promptly pinned this to my Beautiful Beet Recipes board). I had to make them.

Deviled beet eggs/Beet deviled eggs/Ruby eggs/Beetroot devilled eggs

Step 1: Simple beetroot eggs:
free range and/or organic eggs
beetroot juice/beet juice
salt

First you need to hard-boil some eggs. There are several "schools" of boiling eggs, but here's what I do. Place the required number of eggs in a single layer in your saucepan. Pour over boiling water to cover. Set the timer at 8 minutes (I use large eggs, 7 is enough for smaller eggs) and simmer over moderate heat.  Once the timer goes off, rinse the eggs under a cold running water for a few minutes to cool them down.

Note that you don't want  to overcook your eggs, as this results in those unsightly green-blue rings around the egg yolk, caused by sulphur compounds. You can avoid those by not overcooking your eggs in the first place and quickly cooling them down in cold water after cooking. 

When cool enough to handle, peel the eggs carefully. Place in a single layer in a bowl, pour over the beetroot juice, season with a bit of salt. Cover, place into the fridge and leave to marinate for about 3 hours. (Longer, if you want, but I wanted just a thin ruby-red beetroot effect this time).

If you wish, you can serve the eggs just like this, halved - look at that gorgeous yellow yolk! I cut off a thin slice from the base of each egg half - this way they sit neatly on the plate and don't slide all over the place or fall over.

Step 2: Stuffed beetroot eggs/Deviled beet eggs:

If you want to make devilled beetroot eggs, then halve the eggs and gently scoop out the egg yolks. Make your favourite devilled egg mixture. My regular "Estonian deviled eggs" include some mustard, butter and mayonnaise. However, knowing the affinity of beets and horseradish, I used egg yolks, butter, mayonnaise, some strong horseradish and finely chopped dill for the filling. Worked like a treat!

To be more precise, then that's what I did. Mash the egg yolks and butter (I grate the butter and egg yolks finely, but you can also press them both through a sieve). Stir in the mayonnaise and season with salt and horseradish. Mix in the dill.
Spoon onto the egg halves or use an icing bag with a serrated tip and fill the eggs.

Enjoy! You can make these a few hours in advance, but keep them in the fridge until serving then.

Secrets From My Mother's Kitchen: Her Best Recipes (rajiv tiwari)

Everybody loves their mom's cooking recipes. They always seem like the best in the world and no other food recipes can beat it. When it seems like it's been ages since you've eaten your mom's cooking try out these recipes and enjoy!

Tomato Pot Pie Recipe:

Ingredients:
* 4 tablespoons of margarine that's been melted
* 2 small chopped onions
* 4 medium ripe tomatoes that are peeled and sliced
* 2 (9-inch) pre-baked pie shells
* 1 cup of mayonnaise
* ? cup of grated Parmesan cheese
* 4 teaspoons of garlic powder
* salt and pepper to taste

Directions:

1. Saut? onion in margarine until slightly transparent and arrange the tomato slices in the baked pie shells. Put the onions on top.

2. Mix mayonnaise, Parmesan cheese, garlic powder, salt, and pepper in another bowl. Spread a slight layer of the mixture over the tomatoes and onions in the baked shells.

3. Bake at 325? for 30 minutes.

4. Enjoy the deliciousness of Mom's cooking recipes!

Chicken Pot Pie Recipe

Ingredients:

* 1 chicken
* 6 tablespoons of butter
* 4 peeled and chopped carrots
* 4 chopped celery ribs
* 8 ounces of thinly sliced fresh button mushrooms

* ? cup of all-purpose flour
* 1 box of frozen green peas
* 1 tablespoon of chopped fresh sage
* Salt and freshly ground pepper to taste
* 1 egg
* 2 tablespoon of milk

Directions:

1. Boil the chicken in a large pot with enough water to submerge it. After boiling, reduce heat to low and simmer until meat is fully cooked.

2. Remove chicken from pot and reserve 5 cups cooking liquid. When chicken is cool enough to handle, pull off meat in large chunks for the potpie recipe and keep separately.

3. Preheat oven to 375 degrees F. Melt butter in a large pan over medium heat and add carrots, celery, and mushrooms. Saut? for about 10 minutes. Add flour and cook the flour is light brown

4. Slowly whisk in reserved cooking liquid and bring to a low boil while whisking. Add peas and sage.

5. Add the salt and pepper, reduce heat and simmer until thick. Keep stirring.

6. Add chicken, remove from heat and transfer mixture into a baking dish. Bake potpie until chicken mixture is bubbling around edges.

7. Serve immediately to taste the wonder of mom's cooking recipes.

I've just read this inspirational and timely quote in Follow The Money by Steve Boggan. I'm in Austin, Texas, on holiday. We're enjoying the beautiful weather - sorry to gloat! - and have been walking at least a couple of hours every day for a fortnight now, both here and last week in New Orleans. Guylian Sea Shell Easter Egg

Guylians chocolates are sold in over 100 countries worldwide and are one of  the world’s favourite Belgian chocolatiers. They have come a long way since the beginnings back in the 1950's.


Recently I was sent a Sea Shell Egg to review. This egg is a premium Easter egg. The egg comes with a box of Guylian’s  praline Sea Shells. The box of chocolates contains 11 sea shells. The egg has an RRP £5.99. Which I think is a very reasonable price to pay. 


I love chocolate and would probably go as far as to say that I have a problem with it as I'm always eating it. I gave up chocolate for lent this year and have struggled like mad to not touch a bit. I am happy to say that so far I have succeeded and with just under a week left I can see the end in sight. Matthew ate the Sea Shell egg that we were sent to review but was under strict instructions that he was to buy me one before this coming weekend as they are one of my all time favourite chocolates. He said he will but we shall see. He did however say that the chocolate egg and its shells were the best he had tasted.

Bond's Mini Chocolate Eggs

As Easter is fast approaching the boys have been busy making Easter crafts for school and eating lots of chocolates whilst getting creative. There are only two times a year when they are allowed to over indulge in chocolate and that is Easter and Christmas, but they still know that they cant sit and eat all their chocolates at once

The latest products they have been tasting are Bond's Mini Chocolate Eggs. We were sent a selection of packet sizes to try.


You can purchase the Mini eggs from the Bond's website and other good online sweet retailers. The three varieties we were sent. The smallest bag is priced at 39p a pack and are ideal for a treat. The bigger sized packets are priced at 99p and again would be ideal for a treat but as it is a bigger bag you can share them or save them and eat them a few at a time. The boys shared their packet between them and they each had 14 eggs each. The third product they were sent was the jars of Mini Chocolate Eggs. Each jar is made up of 350g of Mini Eggs and would make a great Easter present. We have been using them as rewards in our house so that when one of the boys does something good at school or tries to improve their reading and writing work they get to pick an egg out of the jar.

My boys are huge chocolate fans (well aren't most children), so when they were asked to review some of the new Cadbury Egg 'n' Spoon Easter treats they were happy to lend a helping hand.


Cadbury Egg 'n' Spoon is new for Easter 2013. The product is beautifully presented in a lovely purple carton ( I love it) and comprises four individually wrapped milk chocolate eggs.


You can purchase Egg 'n' Spoon in two different flavours, Chocolate Mousse and Milky Mousse. We were sent the Milky Mousse variety to try. Inside the box you will find two purple spoons so you can use them to scoop out the mousse from the middle of the egg.


Egg 'n' Spoon are ideal to share or enjoy alone and make the perfect Easter treat. Children young and old love them and even Matthew is a fan and sneaked one of the four eggs from the boys. Callum said they were the yummiest thing he had ever tasted and James agreed and asked for another one. We are planning on having an Easter Egg hunt in and around our house and garden (weather dependent) and the Egg n Spoon will definitely be somewhere along the trail.

Simple Magic bars recipe

Sue Lawrence's Anta Bars

I was due to give a Scottish cookery class last Sunday in Aegviidu - a small town about an hour from Tallinn. While finalising the menu for the cookery class (skirlie and clapshot and cranachan and such like), I flipped again through the pages of Scottish author's Sue Lawrence's excellent "A Cook's Tour of Scotland: from Barra to Brora in 120 recipes". One of the last recipes in the book was for Anta Bars - a tray cake that Sue Lawrence was served at the Anta Pottery's tearoom in Fearn, Tain, near Ross-shire in the Scottish Highlands (see here for the exact address). Ingredients? Digestive biscuits, butter, sweet condensed milk, milk chocolate and desiccated coconut. Very similar to Magic bars, though these tend to have a layer of nuts included as well, and are layered somewhat differently (I rely on the Joy of Baking blog for this information).

I had a whole packet of sweet condensed milk I wanted to use, and while I really wanted to make the Millionaire's Shortbread, I decided to give these Anta Bars a go instead. Why? Well, for the Millionaire's Shortbread (also known as caramel shortbread) you need to boil the condensed milk first, whereas the Anta Bars have a layer of regular sweet condensed milk drizzled over the cookie crumb base. So much simpler and quicker.

A word of warning, however. While Scotland can be really proud about the great quality of their produce and ingredients (venison, lamb, beef, salmon, raspberries, shortcakes, haggis etc etc), then this cake is not the healthy option, for the fainthearted or for those counting their calories. It's extremely sweet. You know, tooth-achingly sweet. Definitely an occasional treat rather than your regular afternoon tea or coffee cake :)

Sue Lawrence's recipe was excellent - no surprise, as she is considered one of the best Scottish food writers of our times. However, I did reduce the amount of coconut flakes after the initial attempt, as I had hard time getting the original amount (170 g of desiccated coconut) to stick to the cake and not fall off. Also - even if you might be tempted to use dark chocolate instead of milk chocolate, perhaps to counteract the sweetness, then don't - this cake needs the much sweeter milk chocolate. Trust me, I tried both versions..

Anta Magic Bars or a recipe for caramel, milk chocolate and coconut slices

Serves about 24

Sue Lawrence's Anta Bars

140 g butter, melted and cooled
350 g Digestive biscuits or graham crackers
300 g sweetened condensed milk
200 g good-quality milk chocolate, chopped (or use chips)
100 g desiccated coconut

Line a baking sheet/Swiss roll tin (about 25x35 cm) with a parchment paper. Preheat the oven to 180 C/350 F.
Finely crush the Digestive biscuits (I used my food processor), then mix thoroughly with melted butter. Spoon the biscuit mixture into the cake tin, pressing down. Drizzle the sweetened condensed milk evenly over crumb mixture.
Now scatter the chopped chocolate evenly on top, finally sprinkle with coconut flakes, patting down lightly.
Bake in the middle of the preheated oven for about 20 minutes, until the coconut is golden brown.

Remove from the oven and leave to cool completely before cutting into small squares or bars.

Ingredients:
* 1/8 cup sesame seeds
* 1/8 cup black sesame seeds
* 2 Ahi tuna steaks
* ? tbsn dark sesame oil
* ? sliced red cabbage

* 1 carrots cut into julienne strips
* ? sliced onion
* ? sliced red bell pepper
* 4 ounces snow peas
* Teriyaki stir-fry sauce
* Hot cooked rice

Directions:

1. Combine sesame seeds on a plate and coat both sides of tuna steaks.

2. Heat a large pan over high heat until and cook tuna pan gets very hot. Cook per your liking. Remove from heat, and set aside.

3. Heat sesame oil in saucepan over high heat. Add vegetables, and stir-fry till it's crisp and tender. Put the teriyaki stir-fry sauce to taste.

4. Slice tuna steaks and serve with rice and teriyaki vegetables.

5. Your recipe is ready to eat!


Triple-Cooked Chips

Ingredients:
* 1kg peeled potatoes, cut into chips
* Groundnut oil
* Salt
* Pepper

Directions:

1. Place the chips under running water to wash off the starch.

2. Put the chips in cold water and cook till they're almost falling apart.

3. Take the cooked chips out and let them dry.

4. Freeze for at least 1 hour to remove all moisture.

5. Deep fry the chips little by little in very hot oil. Remove once there's a light crust.

6. Drain the oil on kitchen paper.

7. The chips can be frozen for around 2-3 days at this stage.

8. Whenever you want to eat them, you can deep fry them again will they're golden brown.

9. Add salt and pepper to taste.

10. Enjoy the chips recipe with whatever dip you like!

Comfort food is described as food that offers a sentimental or nostalgic feeling to the person eating it but is basically food that is easy-to-digest, soft in consistency and is either rich in nutrients or calories. Comfort food is easily prepared and flavorful, which is why most people tend to reach for these whenever they are feeling down in the dumps.

Bacon Savoury Roll recipe

This recipe came about when I was trying to recreate a meal that Dave's Mum used to make when he was a child. Apparently what I came up with is nothing like the original but is tasty enough so it's become a regular wintertime dinner.

Bacon Savoury Roll with sweetcorn
Ingredients
6oz self raising flour (or plain flour and baking powder)
3oz vegetable suet
3-4 tbsp cold water
Pinch of salt

Olive oil
3 bacon rashers
1 small onion
1-2 tsp dried mixed herbs
Black pepper

Put the flour, suet and salt into a large mixing bowl. Slowly add the water, mixing it into the dry ingredients to make a dough. You might not need all the water. Cover the dough with clingfilm and leave to rest while you prepare the filling.
Chop the bacon and fairly finely chop the onion.  Heat a couple of glugs of olive oil and fry the bacon and onion until both are lightly browned.
Sprinkle the worktop with flour and roll out the dough to a 'rectangle' about 1/2cm thick.
Lay the bacon, onion and mixed herbs evenly over the dough leaving about 1cm clear at the edges.
Roll up the dough like a swiss roll and pinch the sides together.
Loosely cover with tin foil making sure all the edges are sealed to prevent steam getting in but allowing room for the dough to rise. Roll may increase size by about another half.
Put into a steamer and steam for 3 hours.

I like to serve the roll with sweetcorn and ketchup.
Also, if you are organised enough, make up the roll the day before and cover it with the foil, but then keep it in the fridge instead of steaming it. The bacon juices soak into the dough and make it much tastier. You'll need to add a bit more steaming time though to make up for the roll being that much colder at the start.

Cooking Lasagna The Mexican Way (rajiv tiwari)

Lasagna is authentically an Italian dish, however with this recipe you can add a Mexican twist. Using tortillas as lasagne noodles, this blend creates a completely different experience. Lasagna allows you enough freedom to create completely new things using your imagination, this recipe is an excellent example. Cook it and see for yourself.

Ingredients:
* 1 pound of chicken mince
* ? grated yellow onion
* 2 teaspoons of smoked paprika
* 1 teaspoon of cumin
* 1 tablespoon of chilli powder
* 1 teaspoon of kosher salt
* ? teaspoon of black pepper
* 1 can of diced tomatoes
* 1 can of rinsed black beans
* 1 ? cup of frozen sweet corn
* 1 can of diced and roasted green chillies
* 1 can of enchilada sauce
* 12 large flour tortillas
* 12 ounces of Mexican cheese blend
* 6 ounce can of sliced olives
* 2 chopped scallions
* 2 tablespoons of chopped cilantro

Directions:

1. Preheat oven to 425?F.

2. Drizzle the olive in a large pan over a medium flame. Add the chicken mince, onion, paprika, cumin, chilli powder, salt and pepper (to taste) to the pan. Cook the chicken for about 7 minutes.


3. Add and mix the tomatoes, beans and corn, stirring well. Allow it to cook while you set the baking dish.

4. Smooth a third of the enchilada sauce over the baking dish and put the lasagna substitute - tortillas on the bottom of the pan. The tortillas layer should be around 4 layers.

5. Add half of the chicken mix over top of the tortillas and spread it evenly.

6. Layer more of the lasagna - tortillas on top of the chicken mix. Put yet another third of the sauce over tortillas.

7. Sprinkle half of the cheese on top and add green chillies over the cheese. Add all the chicken mix again and spread properly.

8. Add more lasagna - tortillas over the chicken and sprinkle all the remaining cheese on top. Garnish with the olives and scallions.

9. Bake for around fifteen minutes till the lasagna - tortillas is hot throughout.

10. Remove from the oven and add the cilantro on top.

11. Serve the lasagna hot and enjoy!

One of the simplest ways to cook, this lasagna recipe will leave wanting more every time. Enjoy the unique blend of two different flavours with a dish that never gets boring.

4. Add the tomato paste and keep stirring, cooking for few more minutes.

5. Turn up flame and add wine to the pan. Let it reduce for 3 minutes.

6. Mix in chicken broth and tomatoes. Once the mixture begins to bubble a little bit, add chicken and allow to simmer by cutting down heat.


7. Cook until chicken is warmed completely. Turn off flame and add butter.

8. Serve the perfect chicken recipe immediately!

Pasta Salad Recipe

Ingredients:

Salad:
* ? pound of Farfalle pasta
* Freshly ground pepper
* ? tablespoon olive oil
* ? yellow squash sliced
* ? zucchini squash

3. Mix dressing, pasta and vegetables thoroughly.

How To Cook Lasagna With A Little Twist (rajiv tiwari)

Lasagna can be made in a large number of ways. Unlike the usual recipes, this one adds an element of surprise to your dish. Butternut Squash Lasagna is one of those unusual dishes that will leave you surprised with its yummy taste. Butternut Squash Lasagna

Ingredients:
* ? butternut squash chopped into cubes
* Extra-virgin olive oil for drizzling
* Salt and pepper to taste
* ? pound ruffle-edge lasagna noodles, broken
* 2 cloves garlic, finely chopped
* ? medium head endive , chopped
* About ? cup chicken stock
* ? cups fresh ricotta cheese
* A small handful of thinly sliced sage leaves
* ? cup grated Parmigiano-Reggiano
* 1 tablespoons butter
* 1 tablespoons flour
* 1 cup whole milk
* Freshly grated nutmeg to taste
* ? pound Italian Fontina cheese

Directions:

1. Heat the oven to around 400?F.

2. Put the squash on a baking sheet and lightly add a drizzle of extra-virgin olive oil and salt and pepper to taste. Cook till the squash is golden at edges and tender.


3. Bring a large pot of salted water to a boil and cook the lasagna a little lesser than al dente.

4. While the water is cooking the lasagna, heat a tablespoon of extra-virgin olive oil over medium flame in the pan. Add garlic and stir, then add endive and wilt. Add a little salt and pepper to taste, add stock and simmer gently until ready to use.

5. In a bowl mix the together ricotta, sage, salt, pepper and cheese.

6. In a saucepan, melt the butter over medium heat. Whisk in flour, cook and then add the milk. Raise the flame and add salt, pepper and nutmeg to the sauce. Let sauce thicken and taste to check seasoning.

7. Drain the lasagna noodles and add to the pot. Stir in ricotta cheese mixture, mix thoroughly and then add the roasted squash and endive.

8. Transfer to a casserole and pour the milk sauce. Cover with small layer of Fontina cheese and place in the oven to bake till it's bubbly and brown.

9. Serve your lasagna hot!

Mushroom Soup (recipe)

I nearly always make 'End-Of-The-Week' soup for Saturday lunch to use up any left over veg in the fridge before we go shopping again on Sundays. These soups are all based around the same method. I have salad lunchboxes for work so there are cherry tomatoes and peppers left and sometimes lentils, but this soup requires the special purchase of a whole tub +Sainsbury's closed cup mushrooms - last of the big spenders! They are usually £1 for a 300g tub but are often reduced when close to the sell-by date. The mushrooms don't need to be in perfect condition or even all of the same type.

Ingredients
Olive oil
1 small onion, fairly finely chopped
300g mushrooms, quartered
1 tsp dried dill
500ml light stock, vegetable or chicken
Salt & pepper
Splash of brandy (optional)

Heat a couple of glugs of olive oil in a saucepan and fry the onion until softened but not browned. 
Add the mushrooms and the dill and stir to coat everything in the oil.
Add the stock and bring to the boil. When boiling reduce to simmer and cover the pan to prevent too much evaporation. Simmer for about 20-30 minutes or until mushrooms are well cooked.
Remove from the heat and taste. Season and add a splash of brandy if you've got some / if you want to.

When cooled a little, blend the soup and reheat until almost boiling. Serve with hot buttered toast.
