Easy Dinner Recipe - Tangy Chicken with Lime Sauce

Remove the chicken from the freezer and place it in the fridge to defrost, chop your chives and place them in a bowl that is covered in plastic wrap, and juice your limes. Not only will this method reduce the preparation time of your wholesome dinner, it will also ensure that you have more time to spend catching up with your family.

In order to make the tangy chicken with lime sauce, you will need the following ingredients:

4 skinless, boneless chicken breasts1 egg? cup dry bread crumbs2 Tbsp. (30 ml) olive oil1 cube chicken stock1 lime1 lemon1 tsp minced fresh chives

Once you have placed all of the ingredients on the kitchen counter, you can begin with the preparation. Ensure that the lemon and lime have been juiced. Ensure that you have a platter, frying pan and wire rack at your disposal. Let's get started!

Dip the chicken breasts into the egg and coat with the breadcrumbs. Ensure that the chicken is generously covered in the crumbs. Place onto a wire rack and into the fridge to set for a ten minutes. Preheat your oven to 180 degrees Celsius.Use the frying pan to heat the olive oil over a medium heat. Place the chicken into the pan and fry for three to five minutes on each side, sealing the crumbs. Remove from the heat and place it in the oven.Drain the oil from the frying pan and place it over a low heat. Add the lemon and lime juice, and chicken stock. Let it come to a boil, stir until thick and then remove from the heat.Remove your chicken breasts from the oven, pour over the lime sauce and sprinkle with fresh chives.

Don't forget to pair your chicken pieces with a scrumptious and simple side dish. This can include a fresh summer salad, couscous or fragrant rice.

A holiday celebration full of easy healthy recipes for dinner. (James Jerič)

Do I have not really spoken about how I spent my Christmas and new year, right? It was the more relaxed two weeks of my life where I didn't but as to my heart's content. Can someone say food coma? My mom did it its mission to prepare anything but the best meals. With the hectic urban life of today, professionals often resort to fast food after a busy day at the office. It is convenient but also unhealthy. Fixing dinner should not be a task. Even if you're not no culinary expert, simple recipes healthy dinner are possible if you have a well-stocked pantry.

I occasionally Cook so I'm quite familiar with the things that I have in my kitchen. MOM says that I do the best Buffalo sauce wing while my Raspberry Vinaigrette Dressing recipe is becoming a favorite at family gatherings. Recently experience with Marinades using what I have in my pantry and I am about to refine what I consider the best marinade for chicken. Now, who says cooking is boring, huh??

Culinary experiments were a normal thing in our home. My mom encouraged us to nourish our love for good food and was by it that I knew my way through the kitchen. She was my teacher and I learned a lot from it. One of the best lessons I've learned from my mother was that nothing is better than the magic of homemade food. Certain it is, is one thing that I always ask her when visiting the city.
Among us, brothers, my sister inherited the women of our family's culinary talents. If you have a dish in mind, automatically accepted is that take care of the planning while she makes the execution.
I give credit to my love for good food at the culinary skills specimens of the women in my family. They have taught me to eat healthy and learn to cook in order to survive. Eat a healthy, balanced diet provides nutrients to your body and significantly reduces the risk of developing a variety of chronic diseases. This goes without saying to have control over what they eat will contribute to achieving and maintaining a healthy weight which in turn results in a happier place and a happy you in general.
So ditch the fast-foods and rediscover their love for home cooked meals. Not only you benefit yourself economically but also health issues.
Here is an easy recipe that I discovered my healthy and delicious recipes. Enjoy!

Roast chicken with five spices sauce
Ingredients:
1 (6 pound) whole roasting chicken
1 medium fennel stalks with bulb
12 sprigs of thyme, divided
8 cloves of garlic, crushed and divided
4 lemon wedges
1 (3-inch) cinnamon stick, broken in half
1 whole clove
1 tablespoon olive oil
1 teaspoon black pepper, divided
3/4 teaspoon salt, divided
1 onion, sliced vertically
2 Cups red wine
1 cup chicken broth low sodium
2 strips orange peel
1 anise star
1/2 cup chopped dried apricots
1 tablespoon butter

Preparation:

1. Preheat the oven to 450.

2. Discard the giblets and the neck of the chicken. Adjust hard outer leaves of fennel; hairs feathery fronds to measure 2 tablespoons. Remove and discard the stems. Cut bulb into quarters. Place the fourth 1 fennel, 6 sprigs of thyme, 4 cloves of garlic, lemon wedges, cinnamon 1/2 and whole cloves into the cavity of the body. Combine leaves of fennel oil, 3/4 teaspoon pepper and 1/2 teaspoon salt. From the neck cavity, loosen the skin of the breast and thighs. Rub the mixture of salt beneath the skin. Lift ends of the wings and on the back; Put under chicken. Tie the legs together with twine. Place the chicken on the rack of a broiler pan. Arrange remaining 4 cloves of garlic, quarters remaining fennel and onion in the bottom of roasting pan; Place the grill with chicken in bread. Bake at 450 for 20 minutes.

3. Reduce the oven temperature to 375.

4. Add the remaining 6 sprigs of thyme, is half stick of cinnamon, wine, broth, orange peel and star anise to the bottom of the Pan; Baste the chicken. Bake at 375 for 40 minutes; Baste the chicken. Bake 10 minutes more or until to the inserted a thermometer into fleshy part of the thigh registers 165. Remove from oven; Let stand for 20 minutes.

5. Place a plastic bag inside a 2-cup glass measure. Pour fat into bag; Let stand 5 minutes (fat will rise). Seal bag; cut 1 bottom of the bag. Drain drippings in roasting pan, stopping before fat layer reaches opening; Discard the fat. Cook over medium, scraping of pan to loosen the Golden bits, until reduced to 1 1/4 cups. Remove from heat and add the remaining 1/4 teaspoon salt, 1/4 teaspoon pepper, apricots and butter. Serve the sauce with chicken; Discard the skin before serving.

A Dutch Christmas in Portugal

Several new motorhomes joined us since my last post so there's a bustling little community

of nine campers here now, 17 people including Herman and Albertje. Everyone is Dutch apart from us, one other English couple and Frithjof who is German, but all the Dutch people speak good 'Engels' and are more than happy to switch between languages.

I'm glad we didn't follow my whim of spending Christmas day on the beach though. I know the weather in Portugal isn't anywhere near as bad as it has been back home, but heavy rain set in at about 5pm on Christmas Eve and just kept coming - all night! We managed maybe a couple of hours sleep between us as, with the awning blowing around and the rain thundering on Bailey's roof, it sounded like a hurricane outside. The awning escaped most of its pegs before morning so water got in. However, Bailey coped just fine and we stayed cosy and dry, if wearied.

Christmas Day began with coffee and Buterkoek in the bar. One of the other campers, Peter, had his birthday and joining a group for coffee and cake is a traditional Dutch way to celebrate. We braved the much-lighter-by-then rain afterwards for a hour's walking which meant I got the chance to try out my new Marmot waterproof trousers. They're perfect - comfortable, warm and stayed completely dry throughout the walk which is more than my previous Peter Storm pair ever managed. Well worth the price!
The house at Serro da Bica 

Highlight of the day was our Christmas meal for which we (almost) all gathered in the bar at 5pm. The other English couple won't come to the bar because 'they all speak Dutch' but everyone else was there. Albertje and Herman had arranged the tables with cloths and candles, red and green Christmas napkins and it looked lovely. I wrote out the menu afterwards and all the courses took up two days of my pocket diary - coincidentally, we both felt as though we had eaten a good two days' worth of food! First course was Albertje's homemade Hummous with mini toasts. Then we had Herman's Soup which was similar to a minestrone but with chourico pieces and meatballs in it. Everyone had seconds. Then the main course was a delicious Hachee which is a thrice cooked thick beef stew, vaguely similar in taste to the Greek Stifado. Albertje had been cooking this over the previous two days so we all already knew how good it smelt! The meal is traditional Dutch cuisine, but not traditional for Christmas Day. However, with so many mouths to feed here, it has become the Serro Da Bica tradition and several of this year's guests have been previously and returned. The Hachee was served with roasted rosemary potatoes, rice, spiced red cabbage, pears poached in red wine, and stewed apple. Everyone had at least seconds of all this as well. Then, when you would have thought no one could eat any more, our hosts served a rich dessert of whipped cream with multi-coloured jelly cubes, topped with a conserve of Albertje's homegrown strawberries. Phew! The Dutch have a fantastic word (which I've probably spelt wrongly) - 'outbouken'. It means to sit back and let your stomach hang out after having eaten too much. We all practised 'outbouken' with a small liqueur to finish! Dave had a Portuguese cognac and I had a white port.

We rolled back to Bailey and slept for about ten hours!

Italian stewed octopus recipe

Italian stewed octopus 
A very delayed recipe post here because Dave first cooked this Italian-inspired meal while we were still in Spain and I've been meaning to blog it ever since because this is a delicious dinner. I am surprised at myself that I am happy to eat octopus because I am quite squeamish about things like cooked fish 'looking at me' during my meal and octopus isn't the most visually appetising of seafood, but when it's cut into pieces, it doesn't look too scary! I think I first tasted it in a rice stew when we were in Croatia. The dish contained a few whole baby octopi so I could see exactly what I was eating. One of the main reasons to travel for me though is to try new foods so I was very brave!

It is possible to buy small packs of about 300g of pre-cooked octopus pieces in Spanish supermarkets and this worked perfectly for the first time of creating this dish. For the second time I think we were already in Portugal and had to buy frozen raw octopus instead in order to get little enough for just the two of us. Most meat and seafood in Portugal seems to be sold in quantities suitable for feeding your extended family at every meal. The raw octopus tasted just as good in the end but took a lot longer to cook.


Ingredients:
300g octopus pieces (or enough for two people)
olive oil
2-3 cloves garlic, finely chopped
200ml tomato passata or tinned chopped tomato
100ml white wine
1 tbsp sugar
1 tbsp dried dill
2 tbsp dried parsley
1 tsp chilli powder
salt and pepper

If your octopus is raw, boil in in a large pan of salted water for 1-2 mins, then drain, cut into large pieces, and saute in olive oil for 2-3 minutes. If it's already pre-cooked, ignore this stage.
Heat oil in a large pan and add the octopus pieces. Add chopped garlic and saute for 2-3 minutes.
Add the wine and bring to the boil over a high heat. Stir well and allow to cook for about five minutes. Add tomato and chilli powder then bring back to a simmer.
Add sugar and a scant tsp of salt.
Mix well, cover and simmer for about half an hour.
Check if octopus is done. If it still needs more cooking time, add half the dill and parsley at this point, re-cover pan and allow to continue cooking for up to 45 minutes. Check every 15 minutes or so. Add remainder of dill and parsley when it is done.
If octopus was already cooked at the end of the 30 minutes, add all the dill and parsley together, leave the pan uncovered and turn up the heat for an additional ten minutes to slightly reduce the sauce.
Serve with pasta penne or hunks of fresh bread.

Chicken tikka masala recipe

Chicken tikka masala 



So I promised a Chicken Tikka Masala recipe during my first Ourique post and then completely forgot to publish it. D'oh! Here goes ...

This is my interpretation of a recipe by +Elaine Lemm - her original recipe is here but I had to amend a few bits to suit what we can find locally in Portugal. Dave doesn't like food too spicy so I reduced the chilli making this version less hot than would probably be served in a UK restaurant. Plus life is too short to zest a lime and I always ending up grating my knuckle instead!

There appears to be an almost total dearth of Indian restaurants in Alentejo. You need to travel right down south to the Algarve (and all the holidaying Brits) to find one. Strangely, there are Chinese-run shops in practically every town but hardly any Chinese restaurants either. 


Ingredients:
2 chicken breasts, diced (or enough for 2 people)
1 tsp ground ginger
1 garlic clove, finely diced
salt & black pepper
1 tsp ground coriander
juice of half a lime
olive oil
1/2 tsp chilli powder
1 small onion, finely diced
1 tsp turmeric
1 tsp cumin seeds
200ml double cream
2 tbsp tomato puree
1 tbsp lemon juice

Put the diced chicken in a bowl with the ginger, garlic, salt, pepper, coriander, lime and 1 tsp olive oil. Mix well, cover and leave to marinate for as long as possible. We left ours for about ten hours in the fridge.
When ready to begin cooking, heat more oil in a saucepan and brown the chicken pieces.
Remove the chicken from the pan, lower the heat and fry the onion with the chilli powder until the onion is soft.
Add turmeric and cumin and cook for one minute. I used whole cumin seeds because we didn't have any ground cumin.
Add cream and cook for five minutes. Pingo Doce sells cream differently to what we find in the UK. I used a 200ml carton of cooking cream which most closely resembles double cream. I think you could use plain yoghurt instead.
Return chicken to the pan and cook for five minutes.
Add tomato puree and lemon juice and cook for one minute.
Check chicken is piping hot, then serve immediately with rice.

Interestingly (or not), 'tikka' in Finnish means 'woodpecker'.

Coconut prawns recipe

An unexpected resurrection of a recipe we haven't had for ages made for a delicious dinner tonight. We've brought an old notepad away with us, intending to use the remaining pages for shopping lists and the like, but the first pages contain handwritten recipes for meals that we enjoyed when we first got together all those years ago. Awww! I have no idea where Coconut prawns originated and I had to make a few minor changes to accommodate what was available in the Continente in Estremoz, so this is what we've actually just eaten.

Coconut prawns 
Ingredients:
olive oil
3 shallots
1 clove garlic
1 tsp ground ginger
1/2 tsp chilli powder
2 tsp ground coriander
pinch turmeric
salt and pepper
2 tsp lemon juice
stock cube
200ml coconut cream
prawns

Finely slice the shallots and garlic. Fry slowly in a saucepan in the olive oil until softened and beginning to brown. 
Add the ginger, chilli, coriander, turmeric, salt, pepper and lemon juice. Stir well to combine.
Add the coconut cream and crumble in the stock cube. (A fish or vegetable stock cube would probably be best but I only had beef or chicken so chose chicken.)
Increase the temperature and when the sauce begins to bubble add the prawns. (The smallest amount of prawns we could get was a 250g bag and this was too much. Probably about 150g would have been fine for the two of us.) Stir in well and continue cooking until the prawns are piping hot.
Serve with rice.

I've got a note written at the end of the original to say that the sauce also works well with lamb or as a vegetarian version with cauliflower, leek and courgette.

Turkey Lasagna Can Always Be The Perfect Dinner (rajiv tiwari)

Directions:

2. Season with salt and freshly ground black pepper according to your taste.

3. Keep aside as much as you need for the lasagna. If you have leftover sauce, don't worry. Remember that it can be stored frozen and used later.

4. Preheat the oven to 200? C to bake the lasagna.

5. Stir in the tomato sauce in a bowl with the cooked turkey mince.

6. Heat the butter in a large saucepan and then gently stir in the flour to make a smooth roux.

7. Cook this over a low flame for a few minutes. Carefully add a few tablespoons of the milk and keep whisking to make sure the white sauce for the lasagna has no lumps.


8. Keep stirring in the remaining milk in small amounts, whisking constantly until the sauce is smooth and creamy. Simmer for about 10 minutes and then remove from the heat. Season with the nutmeg, salt and freshly ground black pepper for the perfect flavoured lasagna.

9. Rinse the broccoli well and then stir it into the white sauce.

10. Pour about 100ml of hot water into the bottom of a lasagna baking dish and cover the base with 3 lasagna noodles.

11. Spread a part of the turkey and tomato mixture over the lasagna and then a spread a part of the broccoli and white sauce.

Almost vegetarian mixed bean chilli recipe

When I served up this chilli last night, Dave's first reaction was to call it a sneaky trick because it didn't contain any meat. He did admit that it tasted good though so hopefully I'll get to make it again sometime! I found the original recipe here on allrecipes.co.uk and amended it slightly to make two portions. In reality, this ended up being three portions though so the freezer got one as well.

Ingredients:
2 tbsp olive oil
1/2 a large onion, diced
1 garlic clove, finely chopped
1 red pepper, diced 
2 tsp ground coriander 
1 tsp chilli powder 
2 tbsp tomato puree 
2 tsp ground cumin 
1/2 tsp paprika 
1x 400g can chopped tomatoes 
1x 400g can mixed beans 
250ml stock 
1 bay leaf 
salt to taste

Heat the oil in a large saucepan.

Fry the onion, garlic, red pepper, coriander and chilli powder until the vegetables are soft, stirring occasionally.

Stir in the tomato puree, cumin and paprika, and heat through.

Add the tomatoes, beans, stock and bay leaf. This step is why my chilli was only 'almost vegetarian'. I used a beef stock cube but the original recipe lists vegetable stock.

Bring to the boil then reduce the heat, cover and simmer gently for 30 minutes. Season with salt. It was a bit too runny at this point for our taste so I then kept the pot on a low simmer but uncovered for a further 30 minutes to thicken the sauce.

I served our chilli with steamed basmati rice. If I was serving this regularly and wanted to ring the changes, I could add minced meat but I think I would probably choose bacon bits or chopped smoked sausage instead. Smoked paprika would add a lovely flavour too but we only had regular.

Balsamic salmon recipe with new potatoes and cherry tomatoes

I thought I must have already blogged this recipe as it's a favourite summer meal of ours, but I was surprised to see that I haven't! It's really easy to cook, takes less than an hour and all goes in one dish which can be brought to the table to serve if you are entertaining. The original idea came from the +goodtoknow website a few years ago and I've adapted it since. The ingredients below serve two people

Ingredients:
2 tbsp olive oil
10 pieces new potato
1 tsp dried basil or mixed herbs
2 salmon fillets
12 cherry tomatoes
1 tbsp balsamic vinegar

Preheat the oven to 190C.

Put 1 tbsp of the olive oil into a baking dish that is large enough for all the ingredients. Roll the potato pieces in the oil to thoroughly coat them and sprinkle with the 1 tsp dried herbs. Put the herby potatoes into the oven for 30 minutes.

Remove the dish from the over and nestle the salmon fillets in the centre. You might need to move some of the potatoes to the edges. Put the tomatoes in the dish as well and drizzle the remaining tbsp of oil and the tbsp of balsamic vinegar over the salmon. Return the dish to the oven for 15 minutes or until the salmon is cooked through but not overcooked.

Serve immediately.

Any dried herbs will probably work well with this dish. I like dill or basil with salmon, and parsley goes nicely with the tomatoes. I haven't tried coriander yet but that might be nice too - experiment with whatever you've got in the cupboard. 
You can serve the meal with a green vegetable or a leafy salad. I like green beans or asparagus, but think that peas don't work as well. Not sure why.

Honey mustard glazed gammon recipe

We don't usually eat gammon but were recently kindly given two joints so I tried out a couple of ideas. The first time, I glazed it with hoisin sauce which gave a nice tang but did make it very salty. Also, the first piece was kept whole with glaze just over the top so most of the meat didn't have the added flavour. The second piece got a honey mustard glaze instead and I glazed each slice. No oversalty taste and sweet glaze flavour in every bite - much better! 

Ingredients
800g gammon joint
2tbsp honey
1tsp English mustard

Cook gammon according to pack instructions. I had an 800g piece which I baked in a lidded pyrex dish at 190C for (ten minutes over) 1 ½ hours (yes, I forgot it was in the oven!).

Leave gammon to cool. I then refrigerated ours overnight. You could continue without this stage if you wanted to eat the gammon the same day, but it’s easier to slice when it’s cold.

Preheat oven to 190C.

Mix 2tbsp runny honey with 1tsp English Mustard to make a glaze. I used +Sainsbury's own-brand honey and Colman's English mustard.

Cut gammon into 1cm thick slices. Lay the first slice at one end of a shallow and brush with honey-mustard mixture. Lay a second slice partly over the first and brush visible surfaces with honey-mustard. Continue until all slices are in the dish and coated. I ended up with seven neat slices and a couple of smaller odd-shaped bits.

Bake for about 20 minutes until gammon is piping hot and there is still some glaze liquid in the dish. Serve immediately, trickling any remaining glaze over the gammon slices.

The accompanying photo is what we had left over because I couldn’t wait to take a picture of my plate before eating! I served the gammon with new potatoes fresh from our garden and with peas. The remaining glazed slices were excellent cold, cut into small cubes and mixed into my lunchbox salad.

Lemon Poached Chicken & Potato Salad

Ingredients


4 small chicken breast fillets, trimmed
1 lemon, rind removed (see hint), juiced
750g kipfler or pink fir potatoes, scrubbed
100ml extra-virgin olive oil
150g baby green beans, trimmed, halved
1 bunch asparagus, trimmed, cut into thirds crossways
1 tablespoon dill leaves, chopped
2 tablespoons chopped chives

Method

Place chicken in a large, deep frying pan with lemon rind. Cover with cold water. Bring to the boil over medium heat. Reduce heat to low and simmer for 12 minutes. Remove chicken from pan. Cool slightly. Slice across the grain.

Meanwhile, cook potatoes in a large saucepan of boiling water for 15 to 20 minutes or until tender. Using tongs, transfer to a chopping board. Stand for 10 minutes or until still warm but cool enough to handle. Peel potatoes and cut into chunks. Place in a large bowl.

Using a fork, whisk oil, 1/4 cup lemon juice and salt and pepper in a jug. Drizzle three-quarters of the dressing over potato. Stir gently to coat.

Place beans and asparagus in a heatproof bowl. Cover with boiling water. Stand for 3 minutes. Drain. Add to potato with chicken, dill and chives. Drizzle with remaining dressing. Toss gently to combine. Season with pepper. Serve.

Hint: Use a potato peeler to remove the rind from a lemon, avoiding the white pith which can make the poaching liquid taste bitter.

This recipe would take 20 mins for preparation & 30 mins to cook.
