Quick biscuit recipe

This is a simple, versatile recipe that's very easy to make and also dangerously quick so perfect for those times when an emergency sugar fix is needed! We used to make these biscuits when I was child and I think the original version of the recipe is probably from the ancient Good Housekeeping Cookery Compendium that was my Mum's favourite. She made sure that my sister and both got our own suitably dated copies too although, now I come to think about it, I'm not sure what has happened to Mum's?

Ingredients:
6oz plain flour
1 tsp baking powder
1/2 tsp ground mixed spice
4oz butter
2oz sugar
small handful sultanas or any other dried fruit

Grease a baking tray and preheat the oven to about 180C.

Cream the butter and sugar together either by hand or with an electric mixer. When combined add the flour, baking powder and spice and mix again. When the mixture gets to the sort-of breadcrumb stage, throw in the sultanas and continue mixing. Eventually it will form one large ball and when it does you can stop. If you're mixing by hand, this is great exercise for bingo wings!

Take ping pong ball size pieces of the dough and roll them in your hands to smooth the edges. Flatten them slightly as you put them onto the baking tray. Leave a gap between the dough discs as they will expand a little during cooking.

When all the dough discs are on the baking tray, bake them in the preheated oven for about 15-20 minutes. I currently have a fan oven which I set to 180C and the biscuits only take 15 mins as we like them quite lightly baked and crumbly. The biscuits are very delicate while hot so be careful transferring them to a wire cooling sheet or they may disintegrate. Also, try not to eat them straight from the oven as the sultanas will blister your mouth!

Stir in chopped coriander leaves, mint leaves, green chilies and chaat masala. Shake well and refrigerate the dressing for at least an hour. Mix all the cooked beans with diced onion and add the dressing. Toss the salad to evenly mix the dressing and serve cold.

Reduce heat to low and cook for 10 minutes or until water is absorbed. Remove from the heat and set aside, covered, for 5 minutes. Set aside to cool slightly.
Step 2

Heat a large frying pan over medium heat. Add the chicken, tandoori paste and yoghurt and cook, stirring, for 5 minutes or until well combined and heated through. Remove from heat.
Step 3

Spoon the rice among serving bowls. Arrange the cucumber and carrot ribbons over the rice. Top with chicken mixture, coriander, mint, mango chutney and dollop with yoghurt. Serve immediately.

Now that the euphoria of our successful single night in Bailey is wearing off, we’re moving forward and planning the far greater challenge of a Weekend Away! Small steps, people, small steps!

Calculating weight allowances is the most complicated holiday conundrum I think we’ve ever faced and fortunately Dave has the patience to be doing all the working out. Caravans are tricky things if you want to a) be legal and b) not break it. There’s maximum weights for the amount of caravan you can attach to your car, for the amount of stuff you can put in said caravan, and for the amount of additional stuff that you thought would go in the caravan but that it now turns out will need to go in the car. The most irritating aspect of all this though, is the difficulty in finding out exactly what is and is not included in the manufacturers guidelines. Bailey and Citroen both Please Take Note!

Important for caravans we discovered is the Mass In Running Order weight. This is everything you need to run the caravan, but not necessarily to run the holidaymakers. So surely you’d expect essentials like the gas bottles to be included, and the leisure battery, and the spare tyre? Our Bailey has a generous 147kg over the MIRO so we thought we could take loads of additional Stuff. But Dave has now discovered that that the gas (24kg), the battery (20kg) and the spare wheel (19kg) might need to come off that allowance. Might, might not, depends which forums you read. Bailey the manufacturers are resolutely silent on the matter. So possibly only 84kg available.

Same story with the car. Kerb Weight allows for a fairly full tank of diesel and probably a driver. But we can’t find anywhere where Citroen categorically says ‘yes’ for the driver, so we’re having to allow for ‘no’. And drivers are quite heavy – especially this one (not-telling-you kg)! On a positive note, I now have a great incentive to seriously get back into my running. The less I weigh, the more shoes I can take!

Finally in our current considerations, there’s the Nose Weight which is the amount the weight of the caravan pushes down onto the tow bar of the car. It can be adjusted a little by moving stuff around the caravan space, but mostly depends on the amount of tat I’ve stowed. And the nose weight gauge itself uses up 1.5 of our valuable kgs.

So I can take my stripey picnic rucksack because it contains a full set of plastic ‘crockery’: red china dinner plate 700g, red gingham plastic plate 50g. My prized Le Creuset oven dish (1400g) downgrades to an admittedly far more versatile tin pie dish (100g) and it looks like I might even have to cope without my purple pottery teapot (800g).

Sautéed Swiss chard aka warm mangold salad recipe

We had a looong winter this year, and for a while it seemed that Spring has decided not to pay us a visit this year. It did, if a bit late. And then, suddenly, the summer arrived. Surprisingly, my vegetable garden seems to like this long winter/late spring/sudden summer a lot. My salad leaves and leafy greens (kale, Swiss chard/mangold, sprouting broccoli) are really thriving, the radishes gave us a bumper crop. The tomatoes, beets, carrots - you name it - all seem to be having a great time! And we'll surely be eating lots of Swiss chard this summer!

Here's my latest Swiss chard crop:

My first mangold dish of the season? This Swiss chard, ricotta and tomato bake, of course. However, then I was a bit lost again, as I couldn't decide which one to pick from those 20 recipes on my Estonian site. I turned my (well, Nami-Nami's) Facebook fans (all 17 000 + of them!) for their favourite Swiss chard/mangold recipes, and one of them, Nelli, recommended this salad recipe on Shelly's QuickQuickYumYum blog.

Warm mangold salad
(Soe lehtpeedisalat)
Serves 4 as a side dish

Soe lehtpeedisalat. Warm mangold salad. Swiss chard with spices.

a large bunch of Swiss chard/mangold

Dressing:
2 garlic cloves, finely chopped
3 Tbsp extra-virgin olive oil
1 tsp sweet paprika powder
1 tsp cumin seeds, toasted and slightly crushed
salt
half a lemon, juiced

Rinse the mangold leaves, leave to soak in cold water for 5-10 minutes. Drain and cut into strips about 1 cm wide (just under half an inch).
Heat a large wok or frying pan, add the mangold, a few spoonfuls of water and heat for 5 minutes. Stir every now and then.
Mix the dressing ingredients (except lemon juice). Pour over the mangold leaves and continue sautéing for another 5-7 minutes, until chard is soft. Remove from the heat, drizzle with lemon juice, taste for seasoning (add more salt, if necessary).
Serve hot or cold.

Meatballs - an amazingly delicious dish (Jim Doyle)

Meatballs are a spicy food made out of meat. Usually, they are made out of beef. However, sometimes, chicken is also used to prepare meatballs. Here are the ingredients required to prepare meatballs.

Lean ground beef 1 lb
Egg 1
Water 2 tsp
Bread crumbs ? cup
Minced onion ? cup
Salt ? tsp
Pepper ? tsp

Preparation method

The first step is to preheat the oven up to 350 degrees. Then pick up a large bowl and mix together the ingredients: an egg, water, bread crumbs, onion, salt and pepper. Then break the ground beef into clumps and add it to the mix. Then you should crush it properly with your hands. Take the clumps and change them into the shape of balls. Keep them on a broiler pan. Grill them at 350 degree Celsius for at least 30 minutes. By this time they will lose its pink color. You have perfect meatballs waiting to be served.

Sweet and sour meatballs

Instead of sticking to the simple preparation you can try your hand at some other recipes. Here are the needed ingredients:

Ground beef 1 pound
Egg 1
Dry bread crumbs ? cup
Diced onion 1
Brown sugar 1 cup
All purpose flour 3 tsp
Water 1 ? cups
White vinegar ? cup
Soy sauce 3 tsp

How to prepare

Take a medium-sized bowl and compound the ground beef, egg, onion and bread crumbs. You should mix well and turn it into the shape of golf-sized balls. Place the balls onto the large skillet and heat it under average temperature. Once the balls become light brown in color, stop heating them. Again, in a large sauce pan compound the other ingredients including brown sugar, water, vinegar and soy sauce. Then, boil them. You should bring down the heat and allow them to boil for 30 minutes. You should stir them at regular intervals. When you see the color changing into brown, you can be sure that everything is absolutely ready.


Chicken meatballs

Meatballs can also be made from chicken. Here are is a list of the ingredients:
Ground chicken 1 pound
Beaten eggs 2
Cream cheese ? cup
Grated parmesan cheese ? cup
Dry bread crumbs 1 tsp
Red pepper flakes 1 tsp
Italian seasoning 1 tsp
Garlic powder 1 tsp
Vegetable oil 1 ? tsp
Salt 1 tsp
Black pepper 1 teaspoon
Preparation Process

The cooking process starts with preheating the oven up to 230 degrees Celsius. Place a large bowl and inside it make a compound out of chicken, cream cheese, eggs, parmesan cheese, bread crumbs, Italian seasoning, pepper flakes, salt, garlic powder, vegetable oil, and black pepper. Make a perfect mixture out of these ingredients. Then, turn it into the shape of balls. Keep it on the pan and then place it in the center of the oven. Heat it at the temperature of 74 degree Celsius for 15-17 minutes or until the mix gets rid of the juicy part. Then, take it outside and allow it to set. Now you can proudly serve the dish.

Mike The Knight - Mike's Mission Set


Mike the Knight is a popular programme on the Cbeebies channel. James is a huge fan of the show and loves to pretend that he is a Knight just like Mike, so when we were recently sent the Mike's Mission Set to review he was very happy to get to try it out.


In the box you will find your helmet and sword. The helmet it made from good quality plastic. It is tough and will easily last many a tumble or rough play session. It also has a movable visor and a chin strap so that it stays firmly on your child's head. You have to attach the red feather to the top of the helmet but took no longer than 10 seconds to attach. The sword is made from foam but it is quite tough. James proved this by popping his birthday balloon with it when he decided that he could "bash" it. Needless to say we had a few tears for a little while after. Although tough enough to burst a helium filled balloon the sword isn't wont cause any harm if you happen to be caught by it or hit with it as Callum found out more than once.



You can buy this set from Character Online priced at £14.99. It is suitable for children aged 3+. All 3 boys loved playing with this set but James has claimed it as his own and wont let his brothers play with it. I think this is mainly due to it being his birthday week and getting lots of presents he has assumed this is his too. But it is clear to see that he loves his helmet and sword set and he has said he is a Knight just like Mike.

NoFit State Circus in Bristol

We’ve just spent a lovely weekend visiting family in Bristol which is my favourite of the British cities I’ve seen. If I had to change my small town life for ‘city smoke’, I’d definitely plump for Bristol. Highlights of this weekend were a delicious Moroccan meal at the Assilah Bistro – I had the Alubia and Cannellini Bean Casserole, make sure you leave room for a little Baklava – and a wonderful treat on the Saturday afternoon, a visit to the Circus!

I’ve only been to a circus once before and that was a fairly dowdy affair while on a childhood holiday in the Netherlands. It would have been the mid-1980s, I would have been about ten and still remember being disappointed watching a bored goat biting a Shetland pony as both were dragged around a ring. There were also clowns. I don’t like clowns.

However, the NoFit State Circus we saw this weekend was magical. It’s all people, no animals, and they are very talented acrobats – trapeze artists, rope climbers, wire walkers, jugglers, hoop dancers. They wore striking monochrome steampunk costumes and were accompanied by an excellent live band. As audience, we stood right in among the artistes and were guided around by stewards as the stage set changed to accommodate each performer. This rebuilding alone was an act in its own right and seeing the human counterbalances so close at hand scampering up and down scaffold towers to raise and lower their performers was fascinating. I especially loved the five rope climbers and the juggler, the beautifully controlled artistry of the two people on the square frame, the woman on the high wire IN HEELS!, and the final trapeze act which was simply breath taking. The evening show had already sold out or I think we could have easily turned around and gone back in to watch them again!
Dave checked the NoFit State website when we got home to see if they would be coming to the South East soon. We discovered that they’ve already been and were recently at the Brighton Fringe Festival. Damn! I’ll have to keep an eye on their Facebook page to know in good time for next year …

Indian Chicken and Rice Salad

Ingredients - 12 Servings - 3

1 1/2 cups (300g) basmati rice
2 1/4 cups (560ml) water
2 cups coarsely shredded Steggles roast chicken
1 tablespoon tandoori paste
2 tablespoons natural yoghurt
1 Lebanese cucumber, thinly sliced lengthways
1 carrot, peeled, thinly sliced length ways
1/2 cup coarsely coriander
1/2 cup mint leaves
Mango chutney, to serve
Natural yoghurt, extra, to serve

Rinse the rice in a sieve under cold running water until the water runs clear. Place rice and water in a large saucepan. Cover with a tight-fitting lid or foil and bring to the boil over high heat. Reduce heat to low and cook for 10 minutes or until water is absorbed. Remove from the heat and set aside, covered, for 5 minutes. Set aside to cool slightly.
Step 2

Heat a large frying pan over medium heat. Add the chicken, tandoori paste and yoghurt and cook, stirring, for 5 minutes or until well combined and heated through. Remove from heat.
Step 3

Spoon the rice among serving bowls. Arrange the cucumber and carrot ribbons over the rice. Top with chicken mixture, coriander, mint, mango chutney and dollop with yoghurt. Serve immediately.

Baked Lemon Chicken with Ricotta and Puree

12 Ingredients and 6 Servings

6 chicken breast fillets with skin (wing bone attached - optional)
2 tbs extra virgin olive oil, plus extra to drizzle
1 lemon, sliced
1 bunch mint leaves picked
1 bunch oregano leaves picked
200g sugar snap peas
450g fresh peas
2 bunches thin asparagus, woody ends trimmed
250g thin green beans, trimmed

1 cup (240g) low-fat fresh ricotta
1 garlic clove, crushed
Potato wafers, to serve

Place chicken, oil, and lemon in a large bowl. Tear half the mint leaves and add to the chicken with half the oregano. Season and toss to coat the chicken, then cover and marinate in the fridge for 2 hours.
Step 2

Preheat the oven to 180?C. Cook the sugar snaps and peas in a large pan of boiling salted water for 2 minutes. Add asparagus and beans and cook for a further 2 minutes, then drain. Place in a bowl of iced water to stop cooking.
Step 3

Roughly chop half the vegetables, and then blend in a food processor with the ricotta, garlic, and remaining herbs (reserving a few mint leaves to garnish) until smooth. Transfer to a saucepan, season, and then set aside.
Step 4

Heat an ovenproof fry pan over medium-high heat. Remove chicken from marinade (reserving lemon slices) and cook skin- side down, in batches, for 2-3 minutes until golden. Turn and cook for 1 minute, then turn skin-side up and add reserve lemon to pan. Transfer to the oven for 10 minutes or until chicken is cooked.
Step 5

Meanwhile, place the ricotta sauce over very low heat for 1 minute just to heat through. Reheat the remaining blanched vegetables in a pan of boiling salted water for 30 seconds, then drain.
Step 6

Divide the sauce among serving plates and top with chicken. Place some of the green vegetables, and the parsley and potato wafers on the plates, then drizzle everything with a little olive oil and scatter with the reserved mint leaves.
