Curb down on Sugar - The Alternatives (India Network)

Ok so we all know a Big Mac heads straight for the thighs, but less is said about that cheeky can of coke, a 'wholesome' cereal bar or even that bowl of 'slimming' cereal. Although excess fat leads to weight gain and obesity, sugar is proving to be just as big a player. And it's lurking pretty much in everything. Sugar has little nutritional value beyond providing energy, and there's a lot of energy in there - 400kcal per 100g. So when you're munching through a sugary snack, those calories easily build up without you necessarily feeling satisfied. In a mid-morning sitting a chocolate bar, can of pop and a bag of crisps can make up a pretty big chunk of your daily energy needs - and that's just a snack.
The FSA guidelines state no more than 10% of our energy intake should come from sugar. For your average person needing 2000 calories a day, this translates to no more than 50g sugar - just a Snickers and a bowl of Frosties add up to that. And therein lies the shocker - 75% of our intake comes from the pre-prepared foods we buy. So how do we cut down? The simple answer is avoiding processed foods, but there are also a good few things you can use to replace sugar without going cold turkey on sweetness. Replace your white or brown sugar with an unrefined, dehydrated sugar, like Sucanat or Rapadura.
Yes, it's still sugar but that one change still makes a difference by somewhat reducing the dramatic blood sugar effect, giving your body at least a few nutrients in the process, and avoiding the high temperature and chemical process used to create regular sugar. Food and drinks that have a lot of added sugars contain calories, but often have few other nutrients. To eat a healthy, balanced diet, we should eat these types of foods only occasionally, and get the majority of our calories from other kinds of foods such as starchy foods and fruits and vegetables. Honey
Seen as the more natural choice for sweetening, honey's actually just as calorific as sugar. However, it tastes much sweeter, and its distinctive flavour and weight mean you'll probably use a little less. It's also less processed than sugar and contains compounds thought to act as antioxidants. Hindus believe it's one of the elixirs of immortality.

Erythritol
This sugar alcohol is practically a guilt-free sweet solution. (And the FDA says it's safe!) At 0.2 calories per gram, the white powder from a plant occurs naturally in many fruits. Plus, it doesn't lead to tooth decay and other not-so-sweet effects of sugar consumption. It's not quite as sweet as natural sugar, so try it in chocolate baked goods like brownies.

Stevia
This herb, originally from South America, is extremely sweet by nature but without any calories or sugar-like effects on the body, and you can use as little as a couple drops to sweeten a mug of tea or a few teaspoons in a dessert. It does have a somewhat bitter aftertaste, depending on the type you use. Unrefined foods are always best, and you can buy Stevia as a simple dried powder. Personally, we use this sometimes, but my husband only likes a particular brand of Stevia with absolutely no aftertaste (NuNaturals liquid). It is refined, but it works for us.

Slowly Roasted Chicken - A Dish That You Can Never Forget

You might have tasted different varieties of chicken but slowly roasted chicken is a completely different dish. What makes slowly roasted chicken unique is its taste, flavor and color. How is slowly roasted chicken prepared?

After that, properly cover it with foil and put it in the oven. Cook it well for 1 hour and then get rid of the foil. Then shake the potatoes. Include the bay leaves and the lemon wedges and cook it for another fifty minutes. This time, cook it without covering it. After that, slowly turn the heat up to 220 degrees. Then cook it for 30 minutes. Then, take the bird and potatoes out of the pan. Again, cover it with foil. Allow it to set for 10 minutes. Then, start carving it. Keep the potatoes warm. Now, the slowly roasted bird is ready to be served.

Slowly Roasted Garlic Chicken

Slowly roasted garlic chicken belongs to the slowly roasted family. The only difference is that here garlic is the main ingredient. Ingredients necessary to make this dish are:

Chicken 1 (5 pounds)Kosher salt 2 tablespoonFreshly ground black pepper ½ teaspoonGarlic 4 headsOlive oil 2 tablespoonLemon 1Yellow onion 1Low sodium chicken broth 1 cup

How is it prepared?

Compound the salt and pepper in a small bowl. Take the bird and wipe it lightly with a garlic head. Then, wipe it with oil as well. Add salt and pepper as per your taste. Put a garlic head and the half cut lemon in the bird cavity. Arrange the bottom of the baking dish with the leftover garlic, lemon and onion. Place the bird on top of these and introduce the broth to the baking dish. Then cover it with foil properly. Roast the chicken for one hour. Then take the foil off and slowly rub the bird with the pan juices. Slowly raise the temperature up to 450 degrees F. Continue the process of roasting. Bask the chicken at regular intervals while roasting it. Make sure that the juicy part is completely removed. Roast it for 30 to 40 minutes. The skin becomes golden brown in color when it's ready. Allow it to cool. At the same time put the pan juices in a saucepan and boil them for 7 to 20 minutes under medium heat until they become thicker. Season them as per the need. Then, carve the chicken carefully. It would be ideal if you serve it with a garlic head and the pan sauces. This adds to the taste of the dish.

Tempeh, an Indonesian fermented soybean food that is low in fat and calories, is used to replace the chicken. It is more solid than Tofu and has a stronger texture, which gives off a more chicken like feel. This quick and easy appetizer takes only about 40 minutes to prepare and to cook. It is the perfect option for a lighter and unique alternative to mundane and easy party foods.

Ingredients:
Wings:
8 oz package of Tempeh
1/3 cup soy or skim milk
1/3 cup flour
Salt
1 tsp basil leaves
1 tsp paprika
1 clove garlic
Pepper to taste
1 cup crushed Romano Garlic CheeseSticks
Wing Sauce:
1/2 cup Buffalo wing sauce of choice
1 tablespoon butter
1 tablespoon ketchup

Directions:
1.Preheat oven to 400 degrees. In a large pot, bring 4 cups of water to boil.
2.Cut tempeh into individual slices. If this is your first time eating tempeh, I would recommend cutting it into thin strips to reduce any texture issues. After the tempeh has been sliced, add to the boiling water and let cook for 15 minutes.
3.Set out three medium sized bowls. In the first bowl add the milk. In the second bowl add the flour, salt, basil, paprika, garlic, pepper and CheeseSticks. In the third bowl combine the Buffalo wing sauce, butter, and ketchup.
4.When the tempeh has been boiled, rinse in strainer with cold water. Then dip the cooked tempeh in the three bowls starting with the milk, followed by the dry mixture and ending with the wing sauce.
5.Place the tempeh on a greased baking pan and cook each side for 10 minutes.

This easy party food can be served in several ways. Chop the wings into individual chunks and serve it in a salad for a lighter appetizer. If you would like to serve this as a meal, simply pair the wings with lettuce, tomatoes, and a blue cheese sauce for great buffalo wraps. A Special Kind of Night with Frankie and Benny's

Saturday night was one of my friends Hen Night. She is due to get married to the love of her life in the next few months so a small group of us took her out to celebrate. As I had been asked to review the new Specials Menu at Frankie and Benny's I thought this was the perfect opportunity, well lets face it a special night deserves a special meal.

We headed down to our local restaurant once inside we were quickly seated at a table. We were asked what drinks we would like and then came the hard task of deciding what to eat. As The voucher was for two meals I opted for a starter and a main course and the bride to be opted for a main course and a dessert. 


My starter arrived soon after and I was quite surprised to see how much there was to eat. I ordered the BBQ Chilli Wings, they are described as "Large succulent chicken wings, smothered in our tangy BBQ sauce, sprinkled with chilli flakes. Served with crunchy celery and a cooling dip". They tasted very nice. I thought that the sauce was quite hot however the cool dip  helped to take away the heat from the sauce.


For my main course I choose Philly Chicken and Bacon Wrap. This dish is described as "Our flour tortilla loaded with breaded chicken, grated cheddar, bacon, lettuce and red onion smothered in our philly cheese sauce. Served with a pot of coleslaw and your choice of salad or house fries". I had my meal with fries. The portion was more than enough. I couldn't fault anything on my plate as it all tasted great.


The bride to be chose the Chicken and Bacon Ranch Salad. This dish is described as"Seasoned chicken breast, mixed leaves, pancetta bacon and fresh tomato tossed in our cooling ranch dressing". It looked really nice and she said it tasted just as good.  Again her meal portion was a good size and although it was filling she said it wasn't too heavy.  


The last meal we ordered was the Salt Caramel Cheesecake. As we had both shared the starter and had eaten a main meal each we decided to share the desert too. It is described as "A magnificently creamy cheesecake topped with salt caramel sauce and chocolate honeycomb. Served with a scoop of our real dairy vanilla ice cream". The cheesecake was lovely and full of flavour. 



The Specials Menu is available all day Sunday - Friday, and is fantastic value for money, it costs £10.95 for 2 courses! And you if you are feeling really hungry you can have 3 courses for an additional £2.25!

We had a lovely meal at Frankie and Benny's and would highly recommend any of the meals we ate.

Ingredients For The Mushroom Sauce Recipe:

* 1 tablespoon butter
* ? cup thinly sliced mushrooms
* 1 tablespoons all-purpose flour
* ? cup heated milk
* ? cup chicken broth
* Salt
* White pepper

Directions For Chicken Recipe:

1. Place each piece of chicken between two sheets of wax paper and gently pound with a rolling pin to flatten for the recipe.

2. Season the chicken pieces with salt and pepper.

3. Mix the egg with 1 cup milk and dip chicken pieces in mixture for the recipe.

4. Place a slice of ham and a slice of cheese each, in the middle of each flattened piece of chicken.

5. Lightly brush the top of cheese slices with the milk and egg mixture.

6. Fold ends over the ham and cheese; rolling up and starting with the long side.

7. Keep the recipe secure with toothpicks.

8. Dip the chicken in the flour and then in the remaining milk mixture. Roll the reciepe in bread crumbs to coat it well.

9. Place chicken recipe on a plate and refrigerate, covered for around 2 hours.

10. Heat ? inch of vegetable oil in a large, heavy pan over a medium flame. Fry the chicken rolls for around 20 minutes, turning frequently, until golden brown.

11. Drain the recipe well and serve with mushroom sauce.

1. To make the best mushroom sauce recipe, melt the butter in a pan over a medium flame

2. Saut? the mushrooms very well, until browned.

3. Add the flour and keep stirring until recipe is mixed thoroughly.

It's such a perfect day

Feeling inspired by Robert MacFarlane’s book The Old Ways, which I had finished reading the night before, I set out on foot on Saturday morning towards the great metropolis that is Eastbourne for an art exhibition. I was accompanied on my wanders by the poetry of A F Harrold - Cats Are Better Than Fish - and, once the traffic got too loud for spoken word, Rebecca Pronsky’s Only Daughter album. I love Harrold’s over-the-top use of rhyme in his poems. The Plankton Party is a fun example.

Under a little time pressure because Dave was cycling to meet me near the Art, I took a ‘short cut’ through Ocklynge Cemetery when non-stop traffic prevented me crossing the road. It’s a beautiful place, serene and calming and I like that some areas are neatly kept whereas others are wildlife havens  - all tall meadow grasses and flowers. The route change turned out to be a mistake though as the top pedestrian gate to the cemetery was open and the map showed exits, but, depressingly par for the course, the lower gate was securely padlocked with no obvious alternate way out. Back up the hill again then!

Dave & I liked Barry Wilson’s paintings at the Birley Centre although he was even less impressed by Dependent Rational Creatures at the Towner than I had been previously! We had a delicious lunch at the Barley Sugar café. Dave had garlic mushrooms on toast with delicate flakes of cheese and I had a salami, Emmental and gherkin sandwich. The bread was particularly good, very fresh and with a good flavour made by the Lighthouse Bakery?

On to +Waterstones where we struggled to find a second book to take advantage of their buy-one-get-one-half-price deal. Then Dave decided to set off home as the sky was darkening and the forecast rain looked imminent. It pretty much was. I just got to the +Oxfam GB bookshop door as the deluge began. Dave was still mid-journey and got drenched. Oops! Five book purchases later – always an interesting selection at Oxfam if you don’t mind your books second-hand – and rain was still pouring so I legged it across Grove Road to Beanzz.

I hadn’t been in since the cafe changed hands a short while ago, so was pleased that it still has the same welcoming atmosphere and high standard of coffee. For once, I managed to resist their cake – I had only recently had lunch. Beanzz is hosting an exhibition of John Hesse photography as well as showing four large Gillian Toft paintings. I hadn’t knowingly seen Hesse’s work before so need to do a bit of research for a +Theatrical Eastbourne post. It was sweet that when another customer popped out for a smoke, the staff rushed up with an umbrella for her to borrow. I finished my coffee as the rain ceased so I walked back home too. I loved seeing water vapour rising from walls and roads making them appear to smoulder. Plus I spotted happy sunflowers peeping over a fence which made me smile.

The evening saw us driving through yet more rain to The Palmeira in Hove (actually) for a sold-out Tom Russell gig. He is an amazing songwriter whose lyrics are about very different subjects to the norm. Several songs have a strong Mexican-Spanish vibe to them and the album we recently downloaded has great brass instrumentation. Sadly Tom had not brought the brass band with him but was instead accompanied by talented guitarist Thad Beckman. We hadn’t seen either musician before. Their harmonies were gorgeous and Tom has great stage presence – “Bastardos!” It’s a little bit of a trek, but I’ve Liked the Palmeira’s Facebook page. They specialise in Americana music and we will no doubt want to know about other musicians playing there.

So, in one day, I can tally eight miles walked, three art exhibitions visited, five books queued (plus borrows from Dave), one poet appreciated, one album marched to, one gig danced through, two cafes and a pub patronised, and one soggy boyfriend (now dried out!) consoled.

Blueberry and feta salad

We've had a few good sunny and warm weeks here in Estonia, with temperatures hovering above 20 C on most days (that should be around 70 F). Warmer on some days, with occasional showers. A nice summer indeed.

The weather also determines the food, of course. Ice teas, panzanella and fattoush salads, gazpacho-style and kefir-based cold soups (sweet and savoury) - all these feature heavily. Ice-cream as well, both homemade and shop-bought (Estonian major ice cream makers have come up with some nice flavours, and there's the expensive, but delicious, local organic ice cream brand now, La Muu). Various berries from the farmers market stalls and straight from the bush in our backyard.  Proper summer food :)

I love watermelon and feta salads and have shared few recipes here on my blog: watermelon and feta salad with olives, watermelon and feta salad with lime, watermelon and feta salad with roasted pepitas and balsamic glaze. Still, I was thrilled to discover an alternative fruit and feta cheese salad using blueberries instead. I spotted the recipe over @ the improvised life, and vowed to make it as soon as bilberry season begins. At the end I ended up using large blueberries instead, as I thought they'd be easier to chase with a fork and a knife on a plate than our smaller forest bilberries.

Blueberry and Feta Salad with Mint
(Mustikad feta ja mündiga)
serves 1, can be easily multiplied

a large handful or two of blueberries
crumbled feta cheese
few mint leaves, chopped, if too large
sea salt flakes and freshly ground black pepper, to taste
extra virgin olive oil

Place the blueberries into a shallow plate, crumble the feta cheese on top and sprinkle with mint. Season with salt and pepper and drizzle about a teaspoonful of olive oil on top.

Serve immediately.

Making Frothy Milkshakes

The drink is also known as thick shake or frappe. Eggnog Shake

Ingredients:

Cheery Chocolate Milkshake

Ingredients:

Frozen yogurt or vanilla ice cream - 4 spoonsCold milk - 3/4 cChocolate syrup - 1/4 cMaraschino cherries - 3, stems removedAdditional cherry and whipped topping

Preparation: In a blender, place chocolate syrup, milk, ice cream and cherries. Blend it till it becomes smooth. Garnish with cherry and whipped topping.

Vanilla Milkshake

Ingredients:

Vanilla ice cream - 3 spoonsMilk - 1 1/2 cVanilla extract - spoonSugar - 2 tsp

Preparation: Combine milk, ice cream, sugar and vanilla in a blender. Blend it till it turns smooth.

Peanut Butter Chocolate Milkshake

Ingredients:

Peanut butter - c Chocolate syrup - 1/4 c Milk - 1/4 c Ice cubes - 12

Preparation: Combine chocolate syrup, peanut butter, ice cubes and milk in a blender and blend it till smooth.

Jelly and Peanut Butter Milkshake

Ingredients:

Peanut butter - spoon Jam or jelly - 2 spoons (strawberry, grape or raspberry) Milk - 1/2 c Vanilla ice cream - c

Preparation: Combine jelly and peanut butter well and place it in blender. Add ice cream and milk. Then blend it till it becomes smooth.

Whoppers Malt Shake

Ingredients:

Frozen yogurt or vanilla ice cream - 3 spoons Cold milk - 1/3 c Chocolate malt syrup - 3 spoons Whipped cream topping

Preparation: In a blender, place milk, ice cream and chocolate malt syrup. Blend it till it turns smooth. Garnish it with cherry and whipped topping.

Chocolate Shake

Ingredients:

Vanilla or chocolate ice cream - c Whole milk - 1/2 c Chocolate syrup - 4 spoons

Preparation: In the canister of blender, put all the ingredients and blend them till it turns smooth.

Chunky Milkshake

Ingredients:

Vanilla ice cream - 3 spoons Chocolate chips - 2 spoons Banana - 1/2 Instant coffee - spoon Chocolate syrup - 2 spoons Milk - c Vanilla - 1 tsp

A Spinach Lasagna Recipe That's For Every Occasion (rajiv tiwari)

Ingredients:

* Kosher salt
* Ground black pepper
* 6 dry lasagna noodles
* Extra-virgin olive oil
* 1 cloves garlic, minced
* 5 ounce frozen spinach, thawed
* ? pound cottage cheese
* 2 ounces fresh goat cheese, softened
* 1/3 cup freshly grated Parmesan
* ? pound mozzarella, shredded
* Finely grated zest of ? a lemon
* ? teaspoon freshly grated nutmeg
* Pinch of cayenne
* ? large egg, beaten
* 2 cups tomato sauce, recipe follows

Directions:

1. Preheat the oven to 175? C.

2. Put water and salt it generously in a large pot and bring to a boil over a high flame.

3. Add in the lasagna noodles and boil, stirring occasionally until just al dente. Drain the lasagna and set it aside.

4. In another pan, heat the olive oil and garlic over a medium flame until the garlic begins to go brown and soft.

5. Add in the spinach, salt and pepper and keep stirring till the spinach dries out and the garlic is fragrant. Cool and keep aside for later in the lasagna recipe.

6. Mix together the cottage cheese, goat cheese, Parmesan, half the mozzarella cheese, lemon zest, nutmeg, cayenne and cooled spinach in a bowl. Season it with salt and pepper, to taste. And quickly stir in the egg, mixing it all very well.

7. Cover the bottom of a lasagna baking dish with a thin and even layer of tomato sauce. Cover with 2 of the lasagna noodles placed side-to-side. Add a ? of the cheese mixture and some more of the tomato sauce. Add a little salt and pepper according to taste.


8. Repeat the procedure to make 2 more layers. Cover the lasagna layers with remaining noodles and put the remaining cheese mixture on top. Drizzle with remaining tomato sauce, then sprinkle the remaining mozzarella on top.

9. Bake the lasagna recipe, uncovered, until the lasagna is hot and bubbly for around 40 minutes.

10. Keep the lasagna aside for around 12 minutes before serving.

Tomato Sauce With Basil:

Ingredients:

* Extra-virgin olive oil
* 2 large cloves garlic, smashed
* 1 can whole peeled tomatoes, with juices
* ? teaspoon kosher salt
* 1/3 cup packed basil leaves
* Ground black pepper to taste

Directions:

1. To make the perfect lasagna, one needs the perfect lasagna sauce. Put the olive oil and garlic in a pan and fry until fragrant.

2. Add in the tomatoes and salt and pepper to taste.

3. Break up the tomatoes into small chunks with a wooden spoon and boil over a high flame. Lower the flame to a simmer and cook until thickened for around 30 minutes.

4. Tear basil leaves into small pieces and stir it in to the lasagna sauce once you take it off the flame.

5. Your lasagna sauce is ready!

The Perfect Cake Recipe For Those Who Have to Stay Away From Dairy Products

There are a lot of people out there who absolutely love dairy products or more specifically who love cakes but cannot eat them because of cholesterol problems. Such people have been advised by their doctors to stay away from eggs and milk especially. Now eggs are a crucial part of the cake; an ingredient that holds the cake together. Milk is another important ingredient but cake recipes have been developed over time to cater to the needs of those people who cannot eat products with milk or eggs in them. This is one such cake recipe that will surely be a huge hit with all those people who are under restrictions.

The ingredients used in the cake recipe to make six servings are:

Accordingly a 9 * 9 inch baking pan is greased for use.

Take a large mixing bowl. At first in this cake recipe, you need to resift the flour and the baking powder, baking soda, salt and sugar. In another bowl, you need to take the dry egg replacer and add to it some water which should approximately be about an egg's quantity. Once the egg replacer mixture forms, vanilla and sour cream are mixed in. This forms the egg mixture. Once you add the egg mixture to the flour mixture, beat it thoroughly. Next the batter is spread in uniform layers in the baking pan. If you want, at this point, you can add blueberries and walnuts to this mixture. Slightly stir this to ensure that these additional items stay in the top layer alone.

Use another bowl, in order to prepare the topping you need to add to the cake. It will require about five tablespoons of sugar, margarine and cinnamon. The mixture is mixed with a fork until it looks like a cornmeal which means it should not look smooth. The topping is then sprinkled over the batter in any way that you like.

The cake is then baked in an oven that has been preheated for about twenty to twenty-five minutes. Another way to ensure that the cake has been thoroughly cooked is to insert a toothpick in the batter. When and if it is properly heated, the toothpick will come out of the crown of the batter on its own. Before you serve the cake, it is advisable that you cool the cake a little.

4 large slices whole grain bread, toasted and halved diagonally
1 red Bartlett pear, sliced
2 Tbsp pecans, toasted and chopped
1/4 c watercress sprigs
2 Tbsp honey

1. SPREAD cheese onto 4 half slices of bread. Top with pear, pecans, and watercress. Drizzle with honey.

2. TOP with remaining bread halves and serve.

NUTRITION (per serving) 227 cal, 9 g pro, 34 g carb, 5 g fiber, 7 g fat, 2.5 g sat fat, 228 mg sodium

Roasted Vegetable Soup

PREP TIME: 35 min
TOTAL TIME: 1 hr 30 min
SERVINGS: 6

2 lb carrots, peeled
1/2 lb parsnips, peeled
1/2 lb turnips, peeled
3 Tbsp olive oil
1 onion, chopped
2 Tbsp chopped fresh thyme
4 c low-sodium chicken broth

1. CUT carrots, parsnips, and turnips into 3" x 1/2" sticks. Toss with 1 Tbsp oil on baking sheet. Bake in 450?F oven, stirring occasionally, 40 minutes.

2. HEAT 2 Tbsp oil in pot over medium heat. Add onion and thyme. Cook 4 minutes. Add roasted vegetables, broth, and 2 cups water. Simmer 15 minutes.

3. PUREE in blender (in batches). Salt and seasoning according to taste.

NUTRITION (per 1 1/3-cup serving) 168 cal, 4 g pro, 24 g carb, 6 g fiber, 7 g fat, 1 g sat fat, 167 mg sodium.

I just found another Kickstarter project to back

I love Kickstarter! So far I have backed six projects, three of which have reached their funding goals, two of which haven't and one I backed today which still has 28 days to go - exciting times.

Local-to-me documentary film The Moo Man had a successful Kickstarter campaign to fund its UK cinema release. Two of my favourite Austin musicians Devon Sproule and Sam Baker have both turned to Kickstarter to help with their most recent albums and now I discover through Anais Mitchell that Brooklyn songstress Rachel Ries is fundraising through the platform for her new album Ghost Of A Gardener.

We saw Rachel sing at the Blind Tiger Club in Brighton when she accompanied Anais on the Young Man in America tour in 2012 but this is apparently the first music of her own in five years. Ghost Of A Gardener also features the Austin contingent of Devon Sproule, Paul Curreri, Danny Schmidt and Carrie Elkin - all favourites of mine.

Schleich Knights

The boys have been playing with a selection of toys from a new collection by Schleich over the last couple of weeks.  They were sent a selection from the new collection of Knight toys.



We have reviewed Schleich toys in the past and were not disappointed in the slightest. All Schleich toys are well made and have great amounts of detail to them. I am happy to say that the Knight toys are exactly the same.  As you can see from the pictures below these toys have amazing detail. There isn't a bit that is missed and you can see how much effort has gone into making them look as life like as possible.



There are two types of Knights, The Dragons and The Griffins. Callum said he liked The Dragons as they had red on their horse and armour. Whereas Nathan said he liked The Griffins as they were the good guys and had his favourite colour blue on them. The boys love role play toys and these are perfect. They can choose sides and can have battles between themselves. Even when Callum and Nathan have finished playing James will carry on and take over their Knights and finish off the battle.



The Knights feel firm in your hand. They are made from solid plastic and don't have any moving parts so these toys can also be collected and would look great on a shelf in a little boys bedroom.

The Knights are priced from £8.00 and can be bought online or instore. There are 12 Knights to collect at present.

Advantages of Raw Manuka Honey in Cooking (John Z Smith)

Honey is a natural sweetener and many different varieties are available based on the hundreds of different flowers and plants frequented by bees. Raw manuka honey is made from the tea tree bush native to New Zealand and it has a dark color and robust flavor. Among the many advantages of raw manuka honey are culinary benefits. Everyone from novices to master chefs can use this sweet substance to prepare culinary delights.

Sweet Advantages of Raw Manuka Honey: Honey contains natural sugar, water, protein, vitamins, minerals, and pollen. Fructose and glucose are the main sugars and vitamins include B6, niacin, thiamin, riboflavin, and amino acids. Calcium, iron, copper, manganese, potassium, zinc, and sodium are several minerals that honey contains. Conductivity is an indirect measure of mineral content and the conductivity of manuka honey is approximately four times higher than that of typical flower honey.

Honey is free of fat and cholesterol but does contain beneficial antioxidants. The sweet stuff also has hydrogen peroxide that provides an antibiotic quality. Manuka contains methylglyoxal, an antibacterial substance created by converting a compound found in high concentration in tea tree flower nectar. A rating called UMF was developed to correspond with MG concentration.

Raw Manuka Honey Uses In the Kitchen: Honey has a high fructose level that makes it sweeter than table sugar. For that reason, it is the perfect sugar substitute. People add raw honey to beverages, use it to top their oatmeal, and even mix it with water. One tablespoon of this natural sweetener contains 64 calories and its sugars are absorbed into the bloodstream gradually.


When baking, raw honey can be substituted for sugar in most recipes. To do so, use between ? and ? cup of honey for every cup of sugar called for in the recipe. For each cup of sugar that is replaced, reduce liquid ingredients by ? cup. If baking soda is not an ingredient in the recipe, add ? teaspoon of it for every cup of sugar replaced. Honey causes baked goods to brown more easily so reduce cooking temperature by 25 degrees.

Other Raw Manuka Honey Cooking Tips: Honey never spoils and it can be stored in a kitchen cabinet. If it crystallizes, simply place the container in a bowl of hot water until the substance returns to its liquid state. It can then be used in recipes and to sweeten beverages. Though honey changes the flavor of baked goods, the change is subtle. Many people have no idea that this substitution was made and honey actually makes breads and cakes moister, which is a desirable quality.

There are many other ways to incorporate manuka honey into foods. Use it to make salad dressings, glazes, sauces, and dips. Prepare honey-dipped wings for a picnic or tailgating party and use honey to make granola bars for the kids. Honey can even be used to sweeten different types of homemade preserves. With so many potential manuka honey uses in the kitchen, it is time to get cooking!
