1. Pasta With smoky tomato and seafood sauce:

Ingredients needed to make this pasta are:

i. 4 crushed garlic cloves

2. 4 table spoon olive oil, and finely sliced

3. Deseeded red chili, one and half table spoon fennel seeds

4. 400 gram spaghetti

5. 2 table spoon sugar

6. 2 tablespoon smoked paprika

7. 2 chopped tomatoes of 400g, chopped basil or small bunch of parsley

8. 2 table spoon smoked paprika.

Method:

Step 1: Olive oil should be heated in a deep frying fan and boil the kettle. Add chili, fennel seeds sizzle, garlic for a few minutes in pan. Cook the pasta according to the instruction given in pack after pouring in the boiling water.

Step 2: While the pasta cooks, paprika, tomatoes, sugar and seasoning should be added to the frying pan. Simmer it for 8-10 minutes.

Step 3: Add the pasta to the sauce including the seafood after the pasta is drained. Simmer it for few minutes, if it looks too thick splash the pasta water. Here the healthy pasta is ready, don't forget to serve it with some black pepper and herbs.

Italian stewed octopus recipe

Italian stewed octopus 
A very delayed recipe post here because Dave first cooked this Italian-inspired meal while we were still in Spain and I've been meaning to blog it ever since because this is a delicious dinner. I am surprised at myself that I am happy to eat octopus because I am quite squeamish about things like cooked fish 'looking at me' during my meal and octopus isn't the most visually appetising of seafood, but when it's cut into pieces, it doesn't look too scary! I think I first tasted it in a rice stew when we were in Croatia. The dish contained a few whole baby octopi so I could see exactly what I was eating. One of the main reasons to travel for me though is to try new foods so I was very brave!

It is possible to buy small packs of about 300g of pre-cooked octopus pieces in Spanish supermarkets and this worked perfectly for the first time of creating this dish. For the second time I think we were already in Portugal and had to buy frozen raw octopus instead in order to get little enough for just the two of us. Most meat and seafood in Portugal seems to be sold in quantities suitable for feeding your extended family at every meal. The raw octopus tasted just as good in the end but took a lot longer to cook.


Ingredients:
300g octopus pieces (or enough for two people)
olive oil
2-3 cloves garlic, finely chopped
200ml tomato passata or tinned chopped tomato
100ml white wine
1 tbsp sugar
1 tbsp dried dill
2 tbsp dried parsley
1 tsp chilli powder
salt and pepper

If your octopus is raw, boil in in a large pan of salted water for 1-2 mins, then drain, cut into large pieces, and saute in olive oil for 2-3 minutes. If it's already pre-cooked, ignore this stage.
Heat oil in a large pan and add the octopus pieces. Add chopped garlic and saute for 2-3 minutes.
Add the wine and bring to the boil over a high heat. Stir well and allow to cook for about five minutes. Add tomato and chilli powder then bring back to a simmer.
Add sugar and a scant tsp of salt.
Mix well, cover and simmer for about half an hour.
Check if octopus is done. If it still needs more cooking time, add half the dill and parsley at this point, re-cover pan and allow to continue cooking for up to 45 minutes. Check every 15 minutes or so. Add remainder of dill and parsley when it is done.
If octopus was already cooked at the end of the 30 minutes, add all the dill and parsley together, leave the pan uncovered and turn up the heat for an additional ten minutes to slightly reduce the sauce.
Serve with pasta penne or hunks of fresh bread.

Directions:

1. Start the recipe by brushing 4 souffl? bowls generously with the butter.

2. Add in the grated chocolate into each dish and spread it evenly around the bowls for a tasty recipe taste.

3. In a separate bowl mix the flour, sugar and corn flour.

4. Whisk the egg yolk and whole egg into a bowl and carefully beat in the flour mixture slowly to mix well for the recipe.

5. Pour in the milk and cream into a pot and boil. Remove it from the flame and blend in the chocolate until it mixes completely.

6. Add the hot chocolate to the egg and flour mixture and combine thoroughly. Add it back to the pot and cook for around 5 minutes to ensure you get a consistent recipe. Remove from the flame and cool, beating occasionally.

7. Warm the cream in a pan stopping just before it boils. Take it off the flame and add cocoa carefully, constantly beating the recipe. Cool.

8. Preheat the oven to 170? C. Beat the egg whites and add in the sugar. Beat the recipe well.

9. Combine both the mixtures you've made and whisk in egg white little by little to make the recipe light.

10. Slowly pour in the recipe into all 4 bowls equally, making sure there's no voids.

11. Sprinkle a little grated dark chocolate in the middle of the souffl?. Make sure the top is level and will not spill and burn.

12. Bake the souffl? recipes for 15 minutes.

13. The souffl? recipes should rise a lot more than half, without getting burnt.

14. Serve the souffl? recipes with ice cream if you want.

How To Make Pasta With Lemon And Broccoli (rajiv tiwari)

Ingredients:

* 6 ounces dried pasta shapes in variety, such as fusilli, penne, shell, etc.
* 2 small, boneless chicken breasts
* Salt to taste
* Freshly ground pepper
* 2 tablespoons butter
* 1 tablespoon olive oil
* 1 ? cloves garlic, smashed through a garlic press
* ? large or 1 small bunch broccoli, stems and florets cut into small pieces
* ? cup chicken broth
* Juice of ? lemon

Directions:

2. Half way through cooking the pasta, start patting the chicken dry with a clean kitchen towel for the pasta recipe.

3. Season the chicken on all sides with salt and pepper. In a very large pan, put the olive oil and remaining ? tablespoon of butter and keep over a medium flame. Cook until completely melted and foamy and then add the chicken. Saut? brown and cooked through for the pasta recipe. Cook the chicken over a low flame to avoid burning it.


4. Remove the chicken from the pan and put on to a cutting board and cut into thin slices for later in the pasta recipe.

5. Keeping the flame low, add the garlic to the same pan that you cooked the chicken in. Keep stirring for a little while till the garlic is fragrant but not brown.

6. Add the broccoli, the broth and salt to taste for the sauce of the pasta recipe. Keep stirring to dissolve the browned bits on the bottom of the pan.

7. Cover the pan and turn the flame to medium. Keep cooking until the broccoli is just tender but not overcooked.

8. Add the chicken to the pan as well as lemon juice, zest, walnuts and the buttered pasta. Stir thoroughly to mix the pasta recipe completely.

9. The pasta recipe should be full of flavour and have a lemony zing. Add more seasoning according to your taste.

An Angel Hair Pasta Recipe That Will Make Your Mouth Water (rajiv tiwari)

* ? pound of angel hair pasta
* 6 ounces fresh asparagus, rinsed and sliced
* 2 extra-large, free-range eggs

Directions

2. On another medium flame, put a large non-stick skillet. Add in the bacon and cook for about for around 4-5 minutes till it's nice and crispy for your pasta recipe.

4. Remove bacon and garlic from the pan with and drain off some fat if required, keeping about 1 tablespoon aside for later in the pasta recipe.

5. Crack the egg into the pan and fry in the bacon fat, sunny side up.

6. Remove to a plate when the egg is firm throughout, but the yolk is still runny, which should take 2-3 minutes. Make sure it's done just right for the pasta recipe. Cover it loosely with foil to keep warm. Take the pan off the heat but do not clean the bacon fat off it.


7. When the water boils, add the asparagus and pasta and cook well till al dente as the package says. Make sure your pasta cooks well but doesn't overcook or your pasta recipe won't taste nearly as good.

8. Drain the pasta and asparagus, reserving 1 cup of cooking liquid for later in the pasta recipe.

9. Put the pan back on to a medium flame.

10. Once hot, pour in the cream and bring it to a simmer. Make sure your scrape up all the remaining brown bits off the pan.

11. Throw in the drained pasta and asparagus and slowly pour in the reserved cooking liquid and toss well to coat the pasta recipe evenly.

12. Add in the bacon mixture and season with salt and pepper according to your taste.

13. Toss and mix well. Serve generously on two plates and top with shaved parmesan cheese and reserved fried egg.

14. Serve the pasta recipe when hot to enjoy it the best.

Other new caravan toys we tried out this weekend

The cutest little travel kettle jumped into my trolley at +Sainsbury's last week. It was just over £20 so not particularly cheap but looked perfect for Bailey! We tried it out this weekend just gone and it is much better than the full-size one we had taken to Bosham. It hardly takes up any room and boils exactly enough water for two mugs of coffee. However, the automatic cut-out when it's boiling doesn't work so whoever is brewing up needs to stay close at hand.

We also took our Kindle which I tried out for the first time. Dave's already read Gone Girl by Gillian Flynn which he says is very good and he likes that the Kindle is bright enough to read outside when it's getting dark. I've resisted getting one for ages because I love actual books, but a few titles I've wanted to read recently that are only available in this format so I've been persuaded and we went halves! I downloaded an Eastbourne-based thriller, Devil's Chimney by Tin Larrick which I'm about half-way though at the time of writing. I'll review it on Theatrical Eastbourne soon.

Not so much a new toy as a new way of cooking because I tried out pasta in the caravan microwave for the first time. We conscious that Bailey only has a limited gas supply and the supplied cylinders are UK specific. If we were only ever going away for a week or so, or were staying in the UK, this probably would never be a problem, but as we're planning an extended jaunt in Europe, replenishing the gas supply is going to be an issue. One way of delaying the inevitable, especially as we'll nearly always be paying for an electric hookup anyway, is to use the microwave a lot more than we do at home. I tried out both pasta and rice at home. 6oz of pasta penne needed 680ml water and took 8 mins on full with 5 mins standing to be perfect. It wasn't quite cooked after this in the caravan so I think next time '7 mins full, 5 mins standing, 2 mins full' will do the trick. It's boiling over at around 8 mins so just going for 9 mins straight isn't really an option.

My final new toy that I didn't start using is a posh moleskine journal courtesy of Glenfiddich Explorers. I signed up for their mailing list ages ago in the hope of winning one of the 500 they were giving away, but then totally forgot about it. The unexpected parcel arrived in the same week as I had finally confirmed to work that I wanted to take a sabbatical break. It is such a big decision that I was feeling quite nervous and wondering if we had made the right decision. Seeing your own job advertised is a weird experience! But then the blank journal arrived, ready to record our adventure and I took this as a sign that the fates were with us and we'd made the right decision. (Superstitious? me?) Perhaps there'll be a book in it by the time we get back!

Directions:

Roasted Vegetable Pasta recipe

Proving that vegetarian doesn't have to mean healthy, this tasty pasta recipe is pretty high in dairy badness so probably should be a once-in-a-while meal rather than a regular choice! Quantities below serve two or could be stretched to three if you offset the dairy by also serving a fresh green salad.

Ingredients:
4 tbsp olive oil
1 courgette
1 red pepper
3-4 garlic cloves
1 tsp dried mixed herbs
1 tsp lemon juice
5 oz pasta penne (or other shapes)
200ml creme fraiche
1-2 tsp English mustard
2 oz strong cheddar cheese.

Preheat the oven to 220C.

Cut the courgette and pepper into sticks which are about half a cm square at the ends and as long as you like. Finely slice the garlic. Put the three into a roasting dish and toss with the oil, herbs and lemon juice until all the veg is evenly coated. Roast for 15-20 mins until the veggies are soft and ends of the pepper sticks are starting to blacken.

Meanwhile, cook the pasta in a saucepan that is large enough to fit all the ingredients. Drain pasta and return it to the pan over a low heat. Hopefully the pasta will be done at about the same time as the veggies finish roasting, in which case remove them from the oven and stir them in with the pasta.

Add the creme fraiche, mustard and grated cheese to the pan and stir gently until all the cheese has melted into the sauce. I like to use the +Yeo Valley Half Fat creme fraiche. It comes in a 200g pot which is perfect for this recipe and it has a nice light taste.

Serve with a green salad or hunks of fresh bread.

This recipe is very flexible in that any type of pasta shapes can be used so it's good for using up ends of bags. Also, the mustard doesn't have to be English - I've used wholegrain before - you would just need to adjust the amount depending on its strength and, of course, your liking for mustard! We normally cheddar in the fridge, but I think any similar textured cheese would work just as well if that's what you have. It doesn't matter if it's begun to go a bit hard at the edges so, again, use up odds & ends and experiment.
