Indian Chicken and Rice Salad

Ingredients - 12 Servings - 3

1 1/2 cups (300g) basmati rice
2 1/4 cups (560ml) water
2 cups coarsely shredded Steggles roast chicken
1 tablespoon tandoori paste
2 tablespoons natural yoghurt
1 Lebanese cucumber, thinly sliced lengthways
1 carrot, peeled, thinly sliced length ways
1/2 cup coarsely coriander
1/2 cup mint leaves
Mango chutney, to serve
Natural yoghurt, extra, to serve

Rinse the rice in a sieve under cold running water until the water runs clear. Place rice and water in a large saucepan. Cover with a tight-fitting lid or foil and bring to the boil over high heat. Reduce heat to low and cook for 10 minutes or until water is absorbed. Remove from the heat and set aside, covered, for 5 minutes. Set aside to cool slightly.
Step 2

Heat a large frying pan over medium heat. Add the chicken, tandoori paste and yoghurt and cook, stirring, for 5 minutes or until well combined and heated through. Remove from heat.
Step 3

Spoon the rice among serving bowls. Arrange the cucumber and carrot ribbons over the rice. Top with chicken mixture, coriander, mint, mango chutney and dollop with yoghurt. Serve immediately.

Rhubarb and Apple Crumble recipe

It occurred to me this evening that there's a distinct lack of pudding on this blog. The Seed and Sultana Flapjack is the only non-savoury recipe so far and I think of that as breakfast - it certainly wouldn't pass for dessert. For someone with such a sweet tooth as I have, this is a pretty major oversight so let's redress the balance a little!

We (Dave) planted a rhubarb crown in our garden maybe five years ago and I love picking the first rhubarb stems of the year. They are always so sweet with a delicious flavour. By now, the stems are getting bigger but are still more sweet than sharp. The plant itself takes very little looking after so it's easy food. As long as we (Dave) clear the brambles often enough that they don't strangle it, our little rhubarb seems quite happy. I have two favourite recipes that use it - the Lamb and Rhubarb Tagine I previously blogged, and tonight's pudding, Rhubarb and Apple Crumble. If you were to buy this crumble, eight servings would probably be suggested. I reckon it will really serve four (or two, twice!).

Ingredients:
3 large rhubarb stems
3 Royal Gala apples
small knob of butter
1 tbsp sugar
1/2 tsp ground ginger

6oz plain flour
3oz butter
3oz sugar

Preheat oven to about 180C.

Peel the rhubarb with a vegetable peeler and chop into roughly inch long pieces. Peel and core the apples and chop into pieces of a similar size to the rhubarb. I used Royal Gala today because they were on special and I bought an extra bag. Any eating apples would be fine.

Put the rhubarb and apple into a saucepan over a medium heat with the butter, sugar and ginger. Heat until the fruit has softened, the sugar has dissolved and there is liquid in the pan. Stir frequently so it doesn't stick.

When the fruit has softened but before it purees, remove from the heat and pour into an oven dish. The one pictured is an 8 inch diameter pyrex dish and, I believe, is actually older than me! Set aside while you make up the crumble topping.

Put the flour, butter and sugar into a large bowl and rub together unti the mixture resembles fine breadcrumbs. We like a lot of crumble on our crumble but you could get away with 4, 2 and 2 ozs if you prefer to make the fruit more the focus. Substituting a couple of the flour ounces with rolled oats can give a nice texture, or with ground almonds for a pear crumble. I digress.

Sprinkle the crumble breadcrumbs over the fruit and pat it down gently.

Put the crumble into the centre of the oven for about 20-25 minutes, or until the liquid starts bubbling up around the edges. Serve with cream or ice cream. If any lasts to a second day, you can either serve it cold or reheated.

However, about half of my readers hail from across the pond, and there definition No 1 seems to be more common (evidence: The Pioneer Woman's "the best coffee cake ever" has no coffee in it; you won't find any coffee in Martha Stewart's 12 favourite coffee cakes either). I'm not sure how coffee cake is defined in down under. Anyone?

In any case, here's a cake I've baked no less than four times during the last week - twice for my family and friends, and two cakes for the pop-up café on Saturday. Although modest in appearance, I love the strong cinnamon flavour and the moist crumb, and the just ever-so-crisp caramelised sugar topping.

I warn you - it's rather sweet, so my Estonian readers may actually want to reduce the amount of sugar a little. Also, as the cake contains yoghurt AND baking soda, it is important that you have your oven and cake pan ready before mixing the cake batter. If you wait too long with baking, the soda reacts with the yoghurt and you won't get a soft and lovely cake, but a flat dense one.

Cinnamon cake

Serves 12

150 g unsalted butter, softened
200 g caster sugar
2 large eggs
250 g plain yoghurt (regular, not thick)
270 g all-purpose flour
2 tsp vanilla sugar or extract
1 tsp baking powder
0.5 tsp bicarbonate soda/baking soda
0.5 tsp salt

Cinnamon sugar:
4 Tbsp caster sugar
1 Tbsp ground cinnamon

Preheat the oven to 175 C/350 F. Line a 24 cm/10 inch springform tin with a parchment paper.

Beat butter and sugar until pale and fluffy, either using your stand mixer or a regular electric mixer. Add eggs, one at a time, whisking after each addition. Fold in the yoghurt.

Measure the dry ingredients into another bowl, stir to combine, then fold gently into the egg and butter mixture.

Spoon half of the cake batter into the prepared cake tin, then sprinkle a generous 2/3 of the cinnamon mixture on top. Top with the rest of the cake batter and sprinkle the rest of the cinnamon sugar on top of the cake.

Bake in the middle of the preheated oven for 45-50 minutes, until the cake is lovely golden brown and pulls slightly away from the sides of the pan. Test for doneness - a toothpick inserted in the centre of the cake should come out clean.

Cool in the cake pan, then transfer onto a serving plate and cut into slices.

We're on our way but we're not going far

Stupidly overexcited today and all because I posted a letter at Sainsburys this morning. (I'm easily pleased!) It wasn't as simple as expected because their post box has moved - it's no longer by the front door but now hiding round by the checkouts. I hope the postpeople know because this particular envelope is vitally important. Containing a short letter, hand-scrawled on a page torn from a notepad, and accompanying our deposit cheque, it's now on its way to a little campsite ridiculously close to where we live and where we are going to spend our first night in our new caravan! We've not even collected the 'van yet. Premature? Me?

Old Mill Holiday Park at Golden Cross only has eight caravan pitches so with a bit of luck there won't be too many other people there to watch us painstakingly referring back to the manual for the simplest of tasks! It looks pretty and rustic and I've nicked one of their photos to illustrate this post so you can see. I hope they don't mind. We've only got one night so couldn't travel too far from home although we had planned to go a bit further, but this was one of the nicest we found online. They answered my enquiry email really quickly too which is always encouraging. Should everything go horribly wrong, our house is only 15 minutes away, but I'm sure it will all be fine. Thousands of people caravan - how hard can it be? Plus I already know the food at the Golden Cross Inn is excellent so dinner's sorted!

By then we will already know how to get the bright yellow wheel clamp on and off, and we should be happy negotiating the red hitch lock too. I love how so much caravanning stuff is bold primary colours! Eurotow fitted a shiny new tow bar - which I am desperately hoping I won't be the first to bash my shins on - and we'll have attached and detached at least once by ourselves before. Not sure if we'll have used the remote control parking gadget though? Watching us park might be what passes for entertainment!

Now we've just got to wait until we can get our caravan from Robertsbridge to its new home in Horam, wait again for what will seem like AGES, then tow from Horam to Golden Cross for our Big Night Out. Can't wait!

Asparagus and cheese tart recipe

Originally posted in May 2011, but I'm bumping this up again, as the local asparagus season has began.

Isn't it pretty? This lovely topless tart can be served either warm (perhaps with a green side salad) or cold (cut into thin slices to accompany drinks). It's a simple tart - a puff pastry base (I made a quick rough puff pastry myself) is covered with a layer of grated cheese, followed by an egg and cream mixture, and finally topped with lightly cooked asparagus spears. You could certainly mix the cheese in to the egg and cream mixture, but I loved the visual effect of using a separate cheese layer.

The basic idea is from the UK-based food writer and photographer Alastair Hendy via the always-inspirational Delicious Days, but I omitted the potato layer.

Asparagus and cheese tart
(Spargli-juustupirukas)
Serves 8 to 10

Asparagus tart / Sparglipirukas

500 g puff pastry (store-bought or home-made rough puff pastry)
24 medium-sized fresh green asparagus spears
150 g Gouda or Gruyère cheese, coarsely grated
3 large eggs
200 ml fresh cream (whipping, heavy or double)
sea salt and freshly ground black pepper
freshly grated nutmeg

Snap off the hard and woody lower end of the asparagus spears (these can be used to make stock, for instance). Cook the asparagus spears in a simmering and lightly salted water for about 2 minutes. Drain, rinse quickly under cold water and drain again. Put aside.
Line a rectangular pie dish (approximately 25x35 cm) with a parchment paper. Roll out a puff pastry so it'd cover the base and come up the sides a little. Prick with a fork here and there.
Scatter the grated cheese over the base.
Whisk the eggs with cream, season with salt, pepper and grated nutmeg. Pour carefully over the cheese.
Place asparagus spears on top.
Bake in a preheated 200 C oven for about 30 minutes, until the tart is nicely golden on top and the puff pastry is cooked.

1.) Eggless Vanilla Pudding

Ingredients:
2 cups milk, 1/4 teaspoon salt, 1/2 cup white sugar, 1 teaspoon vanilla extract, 3 tablespoon cornstarch, 1 tablespoon butter
Recipe:
Heat milk in medium saucepan over medium flame till bubbles form at edges. Take sugar, cornstarch, salt and little cold milk (approx 2 tbsp) in a bowl and mix well. Pour this mixture into hot milk with continuous stirring, so lumps don't form. Continue stirring and cooking until mixture thickens well. Do not boil. Now stir in vanilla extract and butter. Pour into serving dishes and chill it before you serve. Garnish with your favorite toppings like chocolate shavings, M&M candies, fruits, or more and serve.

2.) Chocolate - Vanilla Pudding

Ingredients:
1 cup finely chopped pecans, 1 cup all-purpose flour, 1/2 cup butter (melted), 1 (8 ounce) package cream cheese, 1 cup sugar, 1 container (16 ounce) frozen whipped topping (thawed and divided), 3 cups milk, 1 (3.9 ounce) package instant chocolate pudding mix, 1 (3.4 ounce) package instant vanilla pudding mix, 2 (1.45 ounce) bars milk chocolate with crispy rice, crumbled

Recipe:
Preheat oven to 200 degree Celsius. Combine flour, pecans and butter in a medium bowl. Put the mixture in medium sauce pan and bake it for 25 minutes. Allow the mixture to cool. Beat together cream cheese and sugar in a large bowl until it gets smooth. Fold in half of whipped topping and spread it over the cooled crust. In a large bowl combine milk and both vanilla and chocolate pudding mix. Beat until thick. Pour the mixture over cream cheese layer. Top it with remaining whipped toppings and sprinkle crushed chocolate bars over it. Your fantastic treat is ready!!!

3.) Mango & Vanilla Custard Verrines

Ingredients:
1 cup Milk, 1 tbsp Vanilla Custard powder (or substitute with 1 tbsp corflour and 1 tsp vanilla essence), 3 tsp Sugar (Adjust sweetness according to your taste), 1/2 cup Thick undiluted mango pulp, 1 tbsp chopped Cherries for garnishing (optional)
Recipe:
Mix custard powder in 1/4 cup milk and keep aside. Heat left over milk with sugar till it boil's and add custard powder milk mixture to it. Stir continuously until it thickens and see no lumps are formed. When the mixture starts bubbling and looks thickened, allow it to cool down. To assemble the verrines in a glass add a tbsp of prepared vanilla custard alternating it with a tbsp of mango pulp till it reaches the brim. Garnish it with chopped cherries on top, refrigerate an hr at-least and serve chilled.

Pop-up café in Viimsi this Saturday!



Six Estonian foodbloggers - Aire, Britt, Liina, Marju, Silja and yours truly - are setting up a pop-up café at the Viimsi Farmers Market this Saturday. It's not the first time - in September 2011 and September 2012 we opened a pop-up apple cake café (õunakoogikohvik, you can see some photos here) at the same market, and the organisers - Museum of the Coastal Folk - asked us to come and serve our creations at their newest special event, Viimsi Fish Day (Kalapäev).

We were happy to oblige :)

Kalapäev focuses on fish in general, and on the culinary uses of a very invasive species, round goby (ümarmudil) in particular. There are several workshops and events throughout, and our pop-up café (or fish buffet, as we've called it this time) is open between 10-14. The menu is varied and rich - we have various quiches (cottage cheese and smoked sea bass, fresh salmon and broccoli, nettle and smoked fish), tuna-filled profiteroles, salmon muffins, Estonian-style fish and chips, Empanaditas Gallegas, miso-glazed cod, a selection of smörgås aka open sandwiches, jellied pike-perch (zander), smoked mackerel paté toasts, salmon fishcakes with a remoulade, a festive leek pie with cream cheese and smoked salmon topping, sprat pastries - to name just a few. Of course, there will be also some sweet cakes - rhubarb and chocolate and curd cheese and cinnamon and kama will feature in one way or another.

We offer a free cup of espresso to all visitors and homemade cloudy lemonade to the smaller ones!

Roasted Vegetable Pasta recipe

Proving that vegetarian doesn't have to mean healthy, this tasty pasta recipe is pretty high in dairy badness so probably should be a once-in-a-while meal rather than a regular choice! Quantities below serve two or could be stretched to three if you offset the dairy by also serving a fresh green salad.

Ingredients:
4 tbsp olive oil
1 courgette
1 red pepper
3-4 garlic cloves
1 tsp dried mixed herbs
1 tsp lemon juice
5 oz pasta penne (or other shapes)
200ml creme fraiche
1-2 tsp English mustard
2 oz strong cheddar cheese.

Preheat the oven to 220C.

Cut the courgette and pepper into sticks which are about half a cm square at the ends and as long as you like. Finely slice the garlic. Put the three into a roasting dish and toss with the oil, herbs and lemon juice until all the veg is evenly coated. Roast for 15-20 mins until the veggies are soft and ends of the pepper sticks are starting to blacken.

Meanwhile, cook the pasta in a saucepan that is large enough to fit all the ingredients. Drain pasta and return it to the pan over a low heat. Hopefully the pasta will be done at about the same time as the veggies finish roasting, in which case remove them from the oven and stir them in with the pasta.

Add the creme fraiche, mustard and grated cheese to the pan and stir gently until all the cheese has melted into the sauce. I like to use the +Yeo Valley Half Fat creme fraiche. It comes in a 200g pot which is perfect for this recipe and it has a nice light taste.

Serve with a green salad or hunks of fresh bread.

This recipe is very flexible in that any type of pasta shapes can be used so it's good for using up ends of bags. Also, the mustard doesn't have to be English - I've used wholegrain before - you would just need to adjust the amount depending on its strength and, of course, your liking for mustard! We normally cheddar in the fridge, but I think any similar textured cheese would work just as well if that's what you have. It doesn't matter if it's begun to go a bit hard at the edges so, again, use up odds & ends and experiment.

But they are a bit high in calories. To avoid weight gain, use avocado in place of another high-fat food or condiment, such as cheese or mayo.

Red Peppers:
Citrus fruits get all the credit for vitamin C, but red peppers are actually the best source. Vitamin C may be best known for skin and immunity benefits. Researchers in the United Kingdom looked at vitamin C intake in 4,025 women and found that those who ate more had less wrinkling and dryness. And although getting enough vitamin C won't prevent you from catching a cold or flu, studies show that it could help you recover faster. Vitamin C has other important credentials too.

Foodie Fun with McCains

Recently we were asked by McCains to make one of my boys favourite meals - pizza and chips. We were sent the ingredients to create the dish.


Here is the recipe and the ingredients that you will need should you want to create it yourself.

Mini pita pizzas with pick’n’mix toppings and McCain French Fries

Serves: 4
Preparation time: 20 mins
Cooking time: 15 mins

Ingredients:

  • 4/6 whole-wheat pita breads
  • 480g McCain French Fries
  • Salad leaves 
  • Toppings of your choice

For the tomato sauce:

  • 1 tbsp olive oil
  • 400g chopped tomatoes
  • 1 small onion, chopped finely
  • 1 clove garlic, crushed
  • Good pinch of dried mixed herbs

Method:

1. Preheat the oven to 220°C / Gas Mark 9.
2. Heat the oil in a large frying pan, gently fry the onions until soft and golden, and add
the garlic and herbs. Add the tomatoes and simmer until thickened (for approx 20
minutes).
3. Meanwhile brush each pita with a little olive oil and grill until crispy (this stops the
base from going soggy).
4. Top the base of the pita with a layer of your tomato sauce and add your favourite
cheeses and toppings. Chopped ham, sweetcorn, chicken, pineapple, olives,
mozzarella and mushrooms all work well.
5. Spread McCain French Fries evenly on a baking sheet and cook for 14-16 minutes
until hot and crispy.
6. After 10 minutes add the pitas to the oven for the remaining 6-8 minutes. Enjoy the
pitas with a serving of French Fries

The recipe was really easy to follow and wasn't too time consuming. In all it took us 20 - 30 minutes to prepare and 30 minutes to cook. Callum loved choosing his own topping and putting it on his pizza. Nathan and James told me what they wanted on theirs and I put it on for them.




I will certainly be creating similar pizzas in the future with the boys, they are healthy and easy to do and it was lots of fun for the boys to be involved too. They can choose what they wanted on their own pizzas and in a way is so much easier than buying pizzas from the supermarket as no one agrees what to have.


There were clean plates all around in our house last night at tea time. The whole meal cost around £10 but this will obviously differ depending on the ingredients that you use and the shop where you purchase them from. Our ingredients were bought from Tesco.

Making Time To Play


Children aren't small for long this is something all us parents know only too well and although many of us lead busy lives it is also important to make sure we find the time to play with our children as this is a crucial time for their learning.

The government, teachers and Ofsted have finally come to realise that play helps children learn. By incorporating fun themes to children’s learning it can help make certain experiences more memorable for them and also less scary. Recently Nathan has been working on a topic in his class called "motion in the ocean". His class went on a trip to an aquarium and have been busy working on projects in their classroom. He came home one day asking to play a game he had learnt in class about the different sea creatures. Similarly the whole school have been creating work around the story of the Gruffalo. This is one of the boys favourite stories as we read it together all the time, as the school have taken on board what children like and enjoy they are encouraging them to learn and as it is something they are interested in they will pay more attention and enjoy it too.

The most important learning can sometimes be come from the most simple of play-times as it enhances problem solving skills, attention span, social development and creativity. One important thing for a parent is learning what makes you happy and what makes you laugh as this will help your child/children cope with challenges. This also acts as a buffer against mental health issues such as depression and anxiety.


PLAY is vital to a child’s healthy development and not just something to be done as a reward or an afterthought.

I make time to play by ensuring the time when the boys are at home is our time. I turn off my phone for at least an hour a day and all the other electrical things that can be a distraction and make sure we have quality time together. This is easy for me as I am a stay at home mum, I ensure that the shopping and housework is done whilst the boys are at school and nursery. I know this isn't always possible for parents but sometimes even making a game out of going food shopping can leave a child with the feeling that they have had quality time with their parent.

Here are some of the things I have recently done / do with the boys on a regular basis.

*Play role play with the boys, both James and I love to sit and play with his Jake and the Neverland Pirates pirate ship and characters. We pretend that we are Peter Pan and Tinkerbell and we have to help Jake and his friends escape the naughty Captain Hook. We can easily spend the afternoon doing this as time flies by. Similarly Nathan loves me to play with him and his Batcave. He is always Batman as he is the good guy, I can be anyone I want to be so longs as they are bad and Nathan can lock me up in jail and save the day as the Super Hero.


* Paint pictures with the boys of their favourite toys. They tell me what they are and what they can do.


* Read stories and become the characters, this makes the boys laugh and they have been known to act out their favourite parts to stories - one of Nathan's favourite stories is Jack and the Beanstalk. He likes to pretend to be the giant and loves to shout "Fee fi fo fum...."


* Play football in the garden with Callum, although I am totally rubbish and he says I kick like a girl (urmmmm hello what exactly am I?) I wouldn't change a thing. He runs rings around me literally but to see his little face when he scores is priceless. He usually pretends to be a top footballer from Arsenal (this of course is debatable that Arsenal actually have any top players) but he loves it.

*Make Lego creations, I spend hours helping the boys to create these masterpieces following pager after page of instructions just for them to demolish it within 5 seconds flat.  But on the plus side Lego helps them to develop their creative sides and ensures that they concentrate on something for more than just five minutes. 

* Going to the park. There is nothing better than a ride on the slide or a push on a swing. Or a walk in te woods with our dog Pepper. We sing songs whilst we walk too (but shhhhhhhhh don't tell anyone as my voice is seriously terrible)

No matter how little time you have spare with your children whether it be 20 minutes or a whole week you should play with them and encourage them to play. Life is too short and you and your child should be enjoying the time you have together. After all the more good influences they have whilst small the better people they will turn out to be in later life.

Dementia Awareness Week - 19-25 May 2013




Dementia is something my family are all too familiar with. My Grandad was diagnosed 5 years before he died from an infection that caused blood poisoning. To say those last 5 years of his life were hard is an understatement both for him and us - his family. I loved my Grandad as much as any Grandaughter should and he returned that affection to myself and his 50 other Grandchildren, and I really hated how he had been taken away from us. Looking back I think the last two years of his life were probably the hardest on us all as he had no memory of where he was or who any of us were. He didn't even really know who my Nanna was even though they had been married for over 50 years. He called my Nanna "Mam" and called out for her all the time if he needed anything. Grandad was disabled from a young age after contracting Polio as a child. But he remained reasonably active until several small strokes left him unable to walk and bed bound.  My Nanna died the year before my Grandad and he was very confused as to where she was and why she didn't come when he called her, this was very heartbreaking to witness and even more so for my children as they didn't understand why Grandad was asking for someone who was no longer here. We are still unsure as to why he called her Mam as we don't know if he thought he was a young child again or other than that she was someone who he could rely on and trusted to help him.

My family aren't the only ones to have been effected by Dementia either as Matthew's Grandad also suffered from Alzheimer's Disease. I never met his Grandad as he died before Matthew and I met but from what I have heard he was a lovely man until he became ill. Recently Matthew's Great Auntie was also diagnosed with Dementia but she sadly died not long after her diagnosis. 

The term 'dementia' is used to describe the symptoms that occur when the brain is affected by specific diseases and conditions. Symptoms of dementia include loss of memory, confusion and problems with speech and understanding.

Some facts about Dementia:
  • There are about 800,000 people in the UK with dementia.
  • Dementia mainly affects people over the age of 65 and the likelihood increases with age. However, it can affect younger people: there are over 17,000 people in the UK under the age of 65 who have dementia.
  • Dementia can affect men and women.
  • Scientists are investigating the genetic background to dementia. It does appear that in a few rare cases the diseases that cause dementia can be inherited. Some people with a particular genetic make-up have a higher risk than others of developing dementia.

Symptoms of dementia may include the following:
  • Loss of memory − this particularly affects short-term memory, for example forgetting what happened earlier in the day, not being able to recall conversations, being repetitive or forgetting the way home from the shops. Long-term memory is usually still quite good.
  • Mood changes − people with dementia may be withdrawn, sad, frightened or angry about what is happening to them.
  • Communication problems − including problems finding the right words for things, for example describing the function of an item instead of naming it.
In the later stages of dementia, the person affected will have problems carrying out everyday tasks and will become increasingly dependent on other people.

Why I choose to support Kiva - lending to alleviate poverty

I first discovered Kiva through a Parkrun friend, Martin Allen. I must get back to Parkrun soon, but that's for another blog post! Martin had posted on Facebook about a loan he had made 'on Kiva' and, being nosey, I clicked through to find out more. I'm now hooked!

Kiva is a worldwide organisation, based in America, which co-ordinates microfinance loans that are funded by ordinary people. Each lender pays out $25 (about £20) towards a loan of their choice thereby spreading their risk and creating a lovely community spirit. The loan is then repaid in monthly installments to a Kiva account online from which the lender can choose to either withdraw the money back to their own bank account or to relend it to another deserving cause. Repayments are usually made from around the 17th of the month and I have got into the habit of looking forward to this date. I enjoy the lending process and finding new loans to support. I support women who are trying to improve their own businesses and so far have made 16 loans to 14 different countries across the world. The sheer volume of hopeful recipients can be a bit overwhelming so I tend to search for smaller loans that are near to reaching their funding total.

This month I chose to support Rocio who lives in Columbia and Asmaa who lives in Jordan. Rocio has her own business painting and selling pre-made ceramic figurines and has taken out a loan to buy a kiln so she can create her own figurines and a display case to better exhibit them. Asmaa has a small shop selling children's toys and her loan is to purchase a selection of homewares so now both mothers and daughters will find items to interest them.

Please take a look at Kiva and see if you would like to get involved. There is an element of risk as some loans do default. However I think of each $25 as a donation and if it returns to be lent again, so much the better, but I don't lend money that I couldn't afford to lose. I haven't lost any yet!
