A Fancy Recipe for a Flavourful Egg Curry

Who doesn't love a tasty curry? And who can ever say 'no' to an adventurous meal that includes eggs? If you have been on the hunt for adventurous egg recipes that are sure to impress at your next dinner party, you have just hit the jack-pot. This vegetarian masterpiece will tantalise even the most discerning of taste-buds. So, whip out your favourite savoury seasoning, as well as your non-stick frying pan, and get cooking.

Ingredients:

6 hard-boiled eggs, cut in half1 medium cauliflower2 large potatoes, peeled and cut4 cloves of garlic, chopped2 Tbsp. (30 ml) of almonds, flaked and toasted1 3/5 cups (400 ml) of coconut milk2 Tbsp. (30 ml) of curry pasteA thumb-sized piece of ginger, peeled and grated1 red chilli, chopped1 onion, peeled and dicedA handful of fresh coriander, chopped3 Tbsp. (45 ml) of vegetable oil

Method:

Begin by slowly heating a large, non-stick pan. Once warm, turn up the heat to medium, add the vegetable oil and the onion, and fry for 8-10 minutes until soft and golden.Add the garlic, ginger and chilli and fry for a further two minutes. Turn up the heat slightly and add the potatoes. Fry these for four minutes until the outsides begin to soften.Next, stir in the curry paste and allow to infuse for one minute before adding the cauliflower florets. Coat the florets in the mixture for about one minute.Pour in the coconut milk and mix well. If necessary, add a bit of salt and pepper. Raise the heat and bring the concoction to a sturdy boil whilst stirring. Once boiling, cover the pan, reduce the heat, and leave to simmer for 20-25 minutes. Stir occasionally until the vegetables have softened and the mixture has thickened.Place your eggs, yolk-side up, into the mixture and cover again for two minutes, allowing the curry to simmer gently.Dish up the meal and serve with a generous sprinkling of almonds and a quality cheese seasoning for additional flavour. 1

Chef's tip: Thanks to the cauliflower and potato, this curry can be served on its own. However, if you prefer a bit of rice, feel free to serve it alongside the curry.

This dish is ideal for any lunch or dinner get-together. In fact, it is so simple to make, it will fit in perfectly with any family meal plan, too. If your kids are picky when it comes to spicy foods, simply forgo the chilli and use more cheese seasoning before serving instead.

I put together this simple recipe the evening of this writing. I could not uncover a beef enchilada recipe which used the items I wanted, so I decided I would have to attempt a little bit of experimenting of my own. I took the pans out of the oven a few minutes ago, and they turned out great.
