Indecision on porch awnings

Riversway 260
We've been thinking about getting a nice porch awning for Bailey. Not a full-size one because of the weight and, to a degree, the price. This caravanning as a cheap holiday alternative doesn't seem to take into account the sheer variety of shiny accessories out there and I have magpie tendencies!

Dave has been researching awnings online and we've been keeping an eye on +eBay. To be honest though, once the auctions get to their closing time, the difference in price between a second-hand and a new awning is so minimal that it's not worth the potential hassle so we'll probably buy new.

Rotonde 300
Originally we liked the look of the Riversway 260 (£119) but a couple of days ago I spotted a new arrival in the market, the +SunnCamp Rotonde 300 (£129). We think its octagonal shape will give us a little more usable space than the Riversway. The curves of the Riversway might be more in keeping with those of Bailey though. The Rotonde is fractionally bigger at 300cm across the back compared to the 260cm Riversway but this should fit fine. We measured up for 260 and I'm pretty sure the extra 40cm won't be a problem but Dave's going to pop up to Bailey and measure again - just to be sure!

It would be nice to hear from anyone who's already using either of these, especially if you've put your awning on a Bailey Orion!

Honey mustard glazed gammon recipe

We don't usually eat gammon but were recently kindly given two joints so I tried out a couple of ideas. The first time, I glazed it with hoisin sauce which gave a nice tang but did make it very salty. Also, the first piece was kept whole with glaze just over the top so most of the meat didn't have the added flavour. The second piece got a honey mustard glaze instead and I glazed each slice. No oversalty taste and sweet glaze flavour in every bite - much better! 

Ingredients
800g gammon joint
2tbsp honey
1tsp English mustard

Cook gammon according to pack instructions. I had an 800g piece which I baked in a lidded pyrex dish at 190C for (ten minutes over) 1 ½ hours (yes, I forgot it was in the oven!).

Leave gammon to cool. I then refrigerated ours overnight. You could continue without this stage if you wanted to eat the gammon the same day, but it’s easier to slice when it’s cold.

Preheat oven to 190C.

Mix 2tbsp runny honey with 1tsp English Mustard to make a glaze. I used +Sainsbury's own-brand honey and Colman's English mustard.

Cut gammon into 1cm thick slices. Lay the first slice at one end of a shallow and brush with honey-mustard mixture. Lay a second slice partly over the first and brush visible surfaces with honey-mustard. Continue until all slices are in the dish and coated. I ended up with seven neat slices and a couple of smaller odd-shaped bits.

Bake for about 20 minutes until gammon is piping hot and there is still some glaze liquid in the dish. Serve immediately, trickling any remaining glaze over the gammon slices.

The accompanying photo is what we had left over because I couldn’t wait to take a picture of my plate before eating! I served the gammon with new potatoes fresh from our garden and with peas. The remaining glazed slices were excellent cold, cut into small cubes and mixed into my lunchbox salad.

In a large wok or skillet, heat the butter to medium high heat until the butter melts. Add the garlic powder, onion powder and grated ginger in the wok.

Then add the remaining ingredients. Stir fry for about a minute. Then spray with the Braggs seasoning over the cooking vegetables to taste. Continue to stir fry until lightly cooked (approximately 3 minutes more, depending on the heat level of your stove).

Once done, serve immediately on a clean plate over steam cooked rice.

This is a vegetarian dish and best serve with a side dish or fruits on season.

2. VEGETABLE CHINESE STIR FRY: Original recipe serves two persons.

INGREDIENTS:

2 cups broccoli flowerets1 sweet red pepper1 small zucchini1/2 cup celery, sliced thinly1/2 cup carrots, sliced thinly1 cup mung bean sprouts1/2 cup water chestnuts3 cloves garlic, minced1 medium scallion, white part minced and greens cut into 1/2 inch lengths2 tablespoons pe3anut oil2 teaspoons ginger freshly grated1 tablespoon Lee Kum Kee stir fry sauce (or your favorite mix)1 tablespoon Kikkoman stir fry sauce (or your favorite mix)1 cup water2 teaspoon cornstarch

PROCEDURE:

Cut all the vegetables into bite size chunks (carrots and celery should be sliced thinly). Set aside the broccoli. Plunge broccoli flowerets in hot water for 3 minutes and then drain in a colander.

Heat a large wok or a large skillet over medium high heat in your stove. Pour in the oil and swirl to coat over the pan. Then add all the vegetables except the bean sprouts. Stir for a few minutes more until the vegetables are crisp tender shortly about 4 to 5 minutes. Then you can add the bean sprouts and cook for another 2 minute more.

Then make a space in the center of the vegetables and add the minced garlic and ginger 0 let them cook in the center for 1 minute more. Mix the cornstarch and sauces into the water. Then add it on the center space of the pan and allow it to bubble until it starts to thicken. And then quickly stir fry to mix and coat the vegetables with the sauce. Continue stirring for another 10 to 15 seconds.

Serve while it is hot and best with steam cooked rice.

Avoid too much Salty food - Food tips (India Network)

Salt or sodium chloride is essential for our health, yet many of us are unknowingly consuming far more than we should. Many people avoid adding salt to food or to cooking to keep their salt intake down, however, the majority of salt (around 75%) that we consume is already present in processed food such as bread, breakfast cereals, pastries and ready meals. A high salt intake is associated with high blood pressure and heart problems. It's also linked to stomach cancer and osteoporosis.

How much salt should be in our food?
The Food Standards Agency states that adults should not consume more than 6g of salt a day. The amount recommended for children is a lot less and varies according to age (click here (opens in a new window) for more information). Salt can be listed as salt or as sodium on a product's nutritional information. A high salt content is more than 1.5g salt per 100g (or 0.6g sodium). A low salt content is 0.3g salt or less per 100g (or 0.1g sodium). Sodium is an essential nutrient required by the body for maintaining levels of fluids and for providing channels of nerve signaling. Deficiency of sodium is rare, however, can occur in people after excessive vomiting or diarrhea, in athletes who intake excessive amounts of water, or in people who regularly fast on juice and water. Over-consumption of sodium is far more common and can lead to high blood pressure which in turn leads to an increased risk of heart attack and stroke. The current percent daily value for sodium is 2400mg; however, the American Heart Association recommends that people with high blood pressure eat less that 1500mg per day, or less than 3/4 of a table spoon of salt. Since sodium is required by all life to exist, it is naturally found in all foods and rarely does salt ever need to be added. Steps you can take to ensure low sodium eating include: avoiding canned foods, avoiding pickled food, choosing low sodium cheeses, and substituting herbs and other spices in place of salt.


High salt foods - bread

Manufacturers are working towards reducing salt in their bread, yet most commercial bread is still fairly high in salt. If, like many people, you have toast for breakfast and a sandwich for lunch, you could be consuming half your daily quota of salt by lunchtime based on the salt levels in some breads. For a child, this can be more than their daily recommended salt intake.

Baked beans

Baked beans are a staple of the Great British fry-up yet full of salt, which means you'll be well on your way to your daily salt ration if you have beans on toast with bacon. Many manufacturers make low salt baked beans which are a good alternative, or you could even try making your own with haricot beans and fresh tomatoes.

Soy Sauce, Other Sauces, and Salad Dressings

Soy sauce is commonly added to East Asian cooking, and now comes in low sodium varieties which are recommended, check nutrition facts of specific products for sodium content. One teaspoon of Tamari (Soy only) soy sauce contains 335mg (14% DV) and one teaspoon of Shoyu (Wheat and Soy) Soy Sauce contains 282mg of sodium (12% DV). In addition to soy sauces, be sure to check labels of most sauces and salad dressings in general, as these foods can be surprising high in sodium.

Salami, Bacon, and Cured Meats
Salt has long been used as a preservative for various meats, and so it is not surprising to find a high amount of sodium in them. One slice of bacon (8 grams) contains 194mg of sodium (8% DV), while one slice of salami (10g) contains 226mg (9% DV), and 1 large piece of beef jerky (20g) contains 443mg of sodium or 18% DV.
