A Homemade Pork Stir Fry

Through all these years, we have been enjoying being creative in the kitchen by cooking several recipes for stir frying. We have learned to forget Chinese take-outs, because we can make home stir fries more tasting and suitable to the family.

Home cooking gives us the opportunity to be creative and inventive. How we do it, we pick up some new recipes in the cookery sites of the internet and prepare some alterations to try on new ingredients. We have always managed to improve recipes that we get and turn them into sumptuous dishes for the entire family to savor. We have tried pork, beef, chicken and shrimps in several ways.

In altering a recipe, start with the sauce. The sauce is the main flavoring ingredient in a stir fry. It provides the taste for saltiness, spiciness and sweetness. Sometimes it also add sourness or bitterness if you are inclined to have these distinguishing taste in your dish. Then you can also alter the choice of vegetables. Putting your own choices of vegetables in the stir fry makes the stir fry more homely made and suitable for the family. Familiar veggies that the family always love will be in the dish and will surely provide a sumptuous meal for the whole family.

Here is a pork stir fry recipe that you can try and later alter for your own satisfaction.

PORK AND VEGGIES STIR FRY:
Serve this delicious tender pork fry and crisp veggies that can be prepared in just a few minutes and can yield four servings.

WHAT YOU NEED TO HAVE:
FOR THE RICE:
3/4 cup long-grain rice, please cook them according to package instructions.
1/3 cup green onions, please chop them
1/4 cup dry-roasted cashews, salted and coarsely chopped
1/2 teaspoon salt
FOR THE STIR FRY:
2/3 cup chicken broth, please choose the low sodium type
2 tablespoons cornstarch, please divide
3 tablespoons soy sauce, please use the low sodium and divide
2 tablespoons honey
1 (1-pound) pork tenderloin, please trim and cut into 1/2-inch cubes or bite sizes
1 tablespoon canola oil, please divide
2 cups mushrooms, slice them please
1 cup onion, please chop them
1 tablespoon ginger, please peel and grate them
2 garlic cloves, minced
2 cups sugar snap peas, please trim them
1 cup red bell pepper, please remove seeds and chop them

HOW TO PREPARE AND COOK IT:
Cook the rice according to package directions. Please add the 1/3 cup chopped green onions salt and the chopped dry-roasted cashews. Keep warm.

Prepare your stir fry sauce by combining the 2/3 cup chicken broth with 1 tablespoon of cornstarch, 2 tablespoons soy sauce and honey in a small mixing bowl and reserve for frying.

Then mix your pork with the remaining 1 tablespoon of cornstarch and the remaining 1 tablespoon of soy sauce in another bowl but toss them well to coat.

Begin frying by heating a wok or large skillet over high flame on your American stove. Add 2 teaspoons of oil and wait till it smokes.

Then add the pork and cook for 4 minutes until browned. Flip occasionally. Transfer to a plate.

Then reheat the pan and add the remaining 1 teaspoon oil.

Cook the mushrooms plus the 1 cup onion and saute for 2 minutes.

Add the ginger and garlic for seasoning cook for 30 seconds.

Then add the peas and the bell peppers continue to stir for a minute.

Add back the pork and cook for a minute more.

Then finally pour in the sauce mixture and bring to a boil. Wait for the sauce to thicken but stir constantly. Remove to a serving plate.

Serve this pork stir fry over your cashew rice.
