Asparagus and Rice Soup Fast Recipe

Ingredients:

* 4 clove(s) garlic, crushed and peeled

* 1/3 cup(s) extra-virgin olive oil
* 2 tablespoon(s) extra-virgin olive oil
* 2 cup(s) russet potatoes, cut into 1/2-inch cubes
* 3 cup(s) leeks, chopped, 1/4 inch of white and all green parts
* 2 bay leaves
* 1 tablespoon(s) coarse sea salt or kosher salt, plus more to taste
* 1 1/2 pound(s) fresh asparagus, cut into 1/3-inch chunks, plus more spears for garnish
* 1 cup(s) Arborio rice
* Freshly ground pepper, to taste
* 1/2 cup(s) grated Grana Padano or Parmigiano-Reggiano, plus more to taste

Directions:

* Saut? garlic with 1/3 cup olive oil in a heavy-bottomed, 6-quart pot over medium-high heat for 1 to 2 minutes.
* Add potatoes and cook, stirring occasionally, until crusty but not browned, 4 to 5 minutes.
* Add leeks and cook until softened, 3 to 4 minutes.
* Add 5 quarts water, bay leaves, and 1 tablespoon salt.
* Stir well, scraping potatoes from pot bottom.
* Cover, bring to a boil, and add cut asparagus.
* Lower heat to vigorous simmer and cook, uncovered, about 1 1/2 hours, stirring occasionally, until reduced by a third.
* Add rice, bring to a boil, and cook 10 minutes.
* Remove from heat and season with pepper and more salt to taste.
* Stir in remaining 2 tablespoons olive oil and 1/2 cup grated cheese.
* If desired, steam remaining asparagus and garnish.
* Serve hot.

What a difference a bit of sunshine and a dose of culture makes!

I’m remembering exactly why I do like living around here and I’ve definitely got my happy vibe back! Not that the travelling idea has been shelved - far from it, but the desperation seems to have passed.

Rob Crouch as Oliver Reed: Wild Thing started the ball rolling on Thursday of last week with a fantastic one man show depicting the life of the famous actor. I had not seen any of Crouch’s work before so had no idea what to expect. Sometimes this is the best way to approach theatre –no expectations and allowing yourself to be blown away.

Green Room Productions upped the ante on Friday with The Wife, The Mistress, The Chair. A powerful drama in the tiny Little Theatre, the production and the venue complementing each other perfectly and I am sure there were moments where every single audience member was holding their breath from the suspense. I love Green Room Productions and hope to see them continue to grow over the next few years – although selfishly, not too much that I can’t get tickets!

A completely different prospect on Saturday afternoon was Sutton Theatre Company’s Return To The Forbidden Planet. My sister being in the cast, attendance bordered on compulsory(!), but STC do put on an good show – bright, slick, colourful and energetic – so it was worth the journey. Their sets and costuming are always great and this musical really suited them as there’s lots of big production numbers to show off their strong singing. Watching my little niece totally engrossed in the show was great fun too.

Sunday morning saw me up before the crack of lunch to be at Beanzz Coffee for my second storytelling workshop. You might remember the first workshop prompting my starting this blog? Fortunately, the second was not a similarly emotional affair! I wore the gorgeous red felt cloche hat I found in Austin for a Mad Hatter’s Tea Party, heard the story of Herne and Andred at Beltane and discovered that I am much better at choosing negative storylines than positive ones for little fish (you probably had to be there!).

To the cinema in Hailsham for Sunday evening and Cloud Atlas which I think is brilliant. I’m not totally convinced and want to see it again to be sure, but it’s certainly got stunning cinematography and I loved the interwoven stories.

A slight let-down on Monday evening, caused in part by high expectations which refers me back to the beginning of this post. The Agatha Christie Theatre Company’s Go Back For Murder was good but not gripping as previous shows. I think in a week where it was the only thing I went to see, the play would have fared better, but put up against Oliver Reed and especially The Wife, The Mistress, The Chair, it suffered by comparison.

Then two evenings in, thankfully because I was knackered, before we were back to enjoying ourselves on Thursday. A trip to London (well, Wimbledon is London to me) and the fabulous Matthew Bourne ballet Sleeping Beauty at the New Wimbledon Theatre. Nearly a disastrous day as the trains were all over the place due to ‘ a person being hit by a train in the Hassocks area’ but we made it with enough time to grab lunch and OMFG! I tweeted ‘Every superlative I know’ and that’s just how we both felt. So much talent, so much creativity, such wonderful ideas! And enough of a budget to bring it all to the stage with real panache. I felt so privileged to be able to have been there.

So now I'm a buzzing again. I've even been running twice, not very far, but enough to be reassured that the colds have finally gone. My blogging drive has returned has returned, no doubt inspired by the theatrical overdose and helped on its way by three art exhibitions this morning. Food for Kids: Easy Chicken Katsu with Yasai Itame Recipe (Stephen John)

If you are worried that your kids may not be getting the right nutrition from those store-brought chicken nuggets, hotdogs, mac 'n' cheese, cereals, and oats, you can try other recipes that will be inviting to a child's picky palate. Putting in a bit of veggies into their meals will create a balanced meal good for your child's health.

Chicken Katsu is a Japanese style fried chicken that is great with rice and some veggies on the side. Many kids enjoy this particular dish because it is easy to eat like chicken nuggets or fillet. Here is an easy recipe for Chicken Katsu with Yasai Itame or stir-fried vegetables that will be different yet healthier and delicious for your kids.

Ingredients:
- 4 pieces or 5 lbs. of skinless chicken breast fillet
- garlic powder
- flour
- 2 eggs
- Japanese breadcrumbs
- oil for frying
- salt and pepper

For the Yasai Itame:
1 sliced medium onion
1 red bell pepper cut into strips
100 grams beansprouts
500 grams Julienned carrots
1 tbsp soy sauce or Worcestershire sauce
salt and pepper to taste
2 tablespoons oil

Cooking Directions:

1. For the Chicken:
- Lightly pound the chicken breast fillet with a mallet to flatten. Cover the chicken with a plastic wrap while you pound the chicken. Flatten to about 4 x 3 inches.
- Season the chicken on both sides with garlic powder, salt and pepper.
- Beat 2 eggs in a bowl. Prepare the flour in a separate container. Prepare breadcrumbs in a separate container as well.

- Using a kitchen thong, coat each piece of flattened chicken with flour, dip in eggs, and coat again with breadcrumbs. Make sure that the chicken is fully coated with the breadcrumbs.
- In a frying pan, heat oil and fry each piece of chicken in medium heat until golden brown.

2. For the Yasai Itame:
- In a separate pan, heat 2 tablespoons of oil. Combine all ingredients and stir-fry until ingredients are soft and tender. Add salt and pepper to taste.

Finishing Touches: Using a knife, cut the chicken into strips. Serve with steaming hot rice, Yasai Itame, and add store-brought Tonkatsu Sauce or ketchup for some flavoring.

If you prefer other meat like pork or beef, you can simply replace the chicken with the meat of your choice and follow the same steps. Fish is also a healthier choice.

This recipe will only take a couple of minutes of your time and will be even more enjoyable when you include your kids in the preparation. They can help in coating the chicken, setting the table, and mixing some orange juice, iced tea or lemonade that will go well with this meal. As easy as it is to prepare store-brought chicken nuggets, hotdogs, and microwaveable meals, they don't always provide the good nutrition that you child needs. Did you know that it's ANZAC Day today? ANZAC stands for Australian and New Zealand Army Corps. The Department of Veterans' Affairs of the Australian Government explains the Anzac day and tradition in detail. This being a food blog, it suffices to say that apparently these eggless crispy oatcakes were the cookies sent by the Australian and New Zealand women to the soldiers on the frontline during the WWI. And they're lovely - at least their modern equivalent!

The original recipe uses golden syrup, but honey works as well. I actually find the flavour very appealing, similar to the Estonian honey cake, and the chewy-crispy texture went down a treat with my family.

ANZAC-biscuits

About 20 cookies
ANZAC cookies / ANZAC biscuits / ANZAC küpsised

125 g butter
2 Tbsp or 45 g golden syrup or runny honey
1 tsp bicarbonate soda
2 Tbsp water
150 g or 250 ml or 1 cup all-purpose flour
100 g rolled oats
60 g shredded coconut
150 g caster sugar

Line a large baking sheet (or two smaller ones) with a parchment paper. Heat the oven to 175 C/350 F.

Place butter and honey/syrup into a medium-sized saucepan, heat and stir until melted and combined.
Mix soda with water and pour into the saucepan. The mixture will sizzle and foam - this is exactly what should happen. Stir until combined and remove the saucepan from the heat.
In a mixing bowl, combine flour, oats, coconut and sugar. Pour in the butter-syrup-soda mixture and stir until combined.
Using your hands, roll the cookie mixture into golfball-sized balls. Place these on the baking tray, leaving plenty of room between the cookies. Press the cookie dough into thinner disks for especially crisp cookies (that's the way I like them).
Bake in a preheated 175 C oven for about 10 minutes or until cooked (the cookies will harden as they cool down; if you didn't pat the cookie dough down, they may need few more minutes in the oven).

Store in an air-tight cookie jar.

Although the venue is our works canteen, the event is open to the public and if you take a look through the fantastic list of raffle prizes below, you'll see why you need to turn up and buy a strip of tickets! The list was up to date when I wrote this post, but Kat's adding to it all the time so there'll be even more by the 4th! There will also be a bake sale and Kat's got volunteers lined up to create all sorts of delicious cakes, a tombola that has some great prizes, a book stall, a handmade jewellery stall and an Avon stall. Plus, we've just heard that Barclays Bank have agreed to match whatever Kat raises up to a maximum of £750 which is a wonderfully generous donation and it would be fantastic to hit that total. 

The whole event is part of BeValued's 20th Anniversary Year. The company is celebrating by trying to raise £20,000 for charity. (We're up to £7,500 at the moment and it's only April!). Kat's Coffee Morning is in aid of the Alzheimer's Society and you can read about why she has chosen this charity on her Just Giving page. If you're in town on the 4th, do take a few minutes out to come along. The BeValued building is in the Technology Business Park, the entrance on the left after Gosden's and before Courtlands Road. There's a big car park and you can also take the opportunity to discover the St Wilfrid's Hospice furniture shop while you're there! I believe Kat is planning to decorate the place with balloons so it will be obvious where you need to go, but unfortunately the canteen is upstairs so there's no wheelchair access - sorry about that.

How To Make Pasta Right From The Beginning (rajiv tiwari)

Making a traditional Italian pasta recipe can seem to be quite a challenging task. Knowing how to make pasta however isn't that hard at all! The best part about this pasta recipe is that you can team it up with any sauce of your choice and enjoy!

Ingredients:

* 400 grams of flour
* 4 eggs

Directions:

1. Sift the flour into a smooth, separated consistency for the pasta recipe.

2. Pour the flour in a pile and create a hole in the middle. Break the eggs and pour them in the middle.

3. Beat the eggs and the flour and keep adding more and more flour, slowly from around the mixture that you have.

4. Do this until you have smooth dough for the pasta recipe and you can add a few drops white wine for extra flavour if need be.

5. Once you have mixed the flour and egg, use your hands to knead the dough for around 15 minutes till it is smooth and elastic.

6. Keep the dough in a dish and refrigerate it for around half an hour. Your pasta recipe is almost done!

7. After half an hour, remove the dough and divide into medium sized balls. Lightly flour a flat surface and a rolling pin. Roll out the dough for the pasta recipe, making it as thin as possible.


8. Once you have the desired thickness, roll the dough into one long strip. It should be like a spiral, with the thin dough rolled into each other.

9. Cut the strip of dough into thin slices, around quarter of a centimetre.

10. Now, carefully unroll each slice so you flat strips of long pasta. Lay them on a floured flat surface making sure that it doesn't touch each other. Separated strands mean your pasta recipe is going to turn out to be just right.

11. Sprinkle a little bit of flour on top of all the strands and allow them to dry for around two hours.

12. Whenever you want to try out with a new sauce for your homemade pasta recipe, cook your noodles in salted, boiling water for around four minutes.

13. Drain the noodle and serve it with your sauce of choice! Your pasta recipe is ready!

Tasty Thai Fried Rice Recipe (rajiv tiwari)

Ingredients For Fried Rice Recipe:

* 5 cups of cooked rice (better if old)
* 1 cup of chopped chicken sausage
* 1 ? cups of shrimps
* 3 sliced spring onions
* 3 minced cloves of garlic
* 1 sliced fresh red chili
* Oil

Ingredients For Stir-Fry Sauce Recipe:

* 1 tablespoon of oyster sauce
* 1 tablespoon of soy sauce
* 2 tablespoons of fish sauce
* 1 tablespoon of lime juice
* 2 teaspoons of sugar
* ? teaspoon of cayenne pepper

Directions For The Fried Rice Recipe:

1. Always remember that the best friend rice recipes are made from leftover rice. If the rice is too fresh then it lacks the same taste. Old rice ensures that the rice you use in your cooking recipe is dry, which makes your Thai Fried Rice taste so yummy.

2. Sprinkle a little oil over the dry rice and slowly go through it, making sure all the grains are separate and there are no clumps.

3. Mix all ingredients for the stir-fry sauce recipe in a small bowl and set it aside

4. Put 2 spoons of oil in a frying pan over a medium flame and add the garlic. Keep stirring for around a minute.

5. Slowly add in the shrimp and sausage, and stir-fry until cooked. The time it takes to cook the shrimp largely depends on its size, keep checking.

6. Move the ingredients to the side of the pan and add the egg. Scramble fast and mix with the remaining ingredients.

7. Add the rice and sprinkle all the stir-fry sauce over.

8. Stir-fry everything together and keep tossing. Make sure that the heats enough for the rise to crackle but now burn. Keep stirring for 2 more minutes.

9. Add the spring onion and continue for 1 minute.

10. Remove your Thai Fried Recipe from heat and taste. If you want it to be more salty then add around a teaspoon of the fish sauce and mix. If you want your food recipe to be less salty, squeeze some lime and mix.

11. Garnish with the sliced chilli and serve when hot!

Authentic Italian Lasagna Recipe That'll Always Leave You Craving For More (rajiv tiwari)

Cooking authentic Italian Lasagna recipes has become quite rare. Lasagna, being quite a versatile dish, translates into everybody experimenting with the Italian cuisine. While lasagna experimentation usually works out well, it's a good idea to know how to make traditional Italian lasagna as well.

Ingredients:

* ? pound sweet Italian sausage
* ? pound lean ground chicken
* ? cup minced onion
* 1 crushed clove of garlic
* 1 can of tomato paste
* 1 can of tomato sauce
* ? cup water
* 1 tablespoon sugar
* ? teaspoon dry basil
* ? teaspoon fennel seeds
* ? teaspoon Italian seasoning
* ? tablespoon salt
* Pinch of ground black pepper
* 2 tablespoon chopped parsley
* 6 lasagna noodles
* 8 ounces ricotta cheese
* ? egg
* ? teaspoon salt
* ? pound sliced mozzarella cheese
* ? cup grated Parmesan cheese

Directions:

1. Cook the sausage, ground beef, onion, and garlic over medium heat until it's completely browned.

2. Add the crushed tomatoes, tomato paste, tomato sauce and water.

3. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Stir well until it's mixed thoroughly. Now simmer the mixture after covering for an hour. Stir occasionally.


4. Cook the lasagna in boiling water till al dente. Drain the cooked lasagna and rinse with cold water.

5. Mix the ricotta cheese with an egg, remaining parsley, and salt in a separate bowl.

6. Preheat oven to 375 degrees F (190 degrees C).

7. In a baking dish spread some of the meat sauce at the bottom of a baking dish. Arrange 3 lasagna noodles lengthwise over meat sauce. Spread a half of the ricotta cheese mixture on top of the lasagna noodles and a third of mozzarella cheese slices. Spoon some more meat sauce over the mozzarella layer and put some of the Parmesan cheese on top.

8. Repeat the layering and top with remaining mozzarella and Parmesan cheese.

9. Cover it with foil, but make sure the foil and cheese aren't touching.

10. Bake in preheated oven for 25 minutes. Remove the foil and bake for 25 more minutes.

11. Cool for 15 minutes before serving.

2. To start cooking the recipe, remove all the water from the saucepan and the whole garlic clove and cinnamon stick. Cover with water and bring to a boil. Reduce the flame to medium and cook till the chickpeas are tender. Drain and keep separately.


3. In another pot, heat oil over a medium flame. Season the lamb with salt and pepper and cook until the lamb is brown on all sides.

4. Keep the lamb aside in a bowl for a later part of the recipe. Add onion to pot, reduce the flame and add salt and pepper. Keep stirring and saut? until its soft and just starting to brown. Add the chopped garlic, Ras-el-Hanout and ginger and stir for another minute.

5. Add in the tomatoes and lamb and bring it to a boil again. Slowly pour in the chicken stock and keep boiling.

6. Reduce the flame to and cover, leaving a small opening. Let it simmer and keep stirring occasionally, until lamb is tender and well cooked. This can take some time.

7. Add in the chickpeas and simmer till heated thoroughly. Add the apricots and simmer some more. Add salt and pepper according to taste. Your lamb tagine recipe is done!

8. Serve couscous on a large plate making a hole in the middle. Put the tagine in the centre and sprinkle cilantro all over.

Ingredients:
* 2 pounds ground chicken
* 1 diced onion
* 2 ? teaspoons ground cinnamon

* 2 ? teaspoons powdered ginger
* 2 ? teaspoons dry mustard
* 1 teaspoon grated nutmeg
* ? teaspoon kosher salt

* 1 ? cups tomato sauce
* 4 cups of chicken stock
* 2 tablespoons of apple cider vinegar
* 2 tablespoons of Worcestershire sauce
* 1 pound bucatini noodles, boiled in salted water, drained
* ? cup of grated Parmigiano-Reggiano

Directions:

1. In a large pan cook the chicken mince slowly.

2. While the chicken mince is cooking and slightly, add the onion and stir till the chicken is fully cooked and the onion becomes transparent.

5. Once it's mixed well, add the chicken stock, vinegar and Worcestershire sauce. Let it simmer and cook for 1 hour.

How To Make Pasta With Cauliflower


Ingredients:
* 1 ? cups of pitted green olives
* ? cup of chopped fresh parsley
* ? a cup of olive oil
* 1 head cauliflower that's cut into florets

* ? teaspoon of dried red chilli flakes

* ? pound of dried spaghetti

4. Add the water and boil for a minute.

6. Meanwhile, boil pasta in salted water until al dente. Drain and return to pot.

7. Add the cauliflower mixture, mix. Add cheese and mix again.

8. Sprinkle pasta recipe with almonds and serve, with additional cheese on the side.

Recipe for buckwheat with leeks and soy sauce

What's your standby side dish? Pasta? Rice? Couscous? Bulghur? Potatoes? While these figure most frequently in our kitchen as well, then we also have buckwheat about once a fortnight or so. It's easy to cook and the slightly nutty flavour of this pseudo-grain complements quite a few dishes nicely.

Despite its name, buckwheat is not a wheat nor a cereal grain, but belongs to the same family with rhubarb and sorrel. The flavour is hearty and earthy, and it's quite a health food, being nutritionally high in all eight amino acids, calcium, vitamins B and E, and low-GI.

Just some years ago, the buckwheat meant just three things to most people - the Japanese soba noodles, Russian blini and the Breton crepes - all made with buckwheat flour. The hulled and roasted buckwheat kernels - buckwheat groats (kasha) - didn't figure at all, unless you lived somewhere in the Northern and Eastern outskirts of Europe. The Flavour Bible (2009), an excellent compendium of what-goes-with-what written for the American audience, doesn't even mention buckwheat. Heidi Swanson briefly mentions buckwheat flour in her Super Natural Cooking (2007), and suggests combining it with buckwheat honey and tart berries (cranberries, cherries, and such like) - there are no recipes in her book, though you'll find many on her excellent blog, 101 Cookbooks.

And then recipes started popping up here and there. Kim Boyce's Good to the Grain: Baking with Whole-Grain Flours has a great choice of buckwheat recipes, though all using the flour, not the groats (her buckwheat-poppyseed sablés were lovely!). Estonian-American food writer and nutritionist Marika Blossfeldt has several buckwheat recipes in her Essential Nourishment, including kasha casserole and vegetable soup with kasha. Oh, and yours truly has been sharing her favourite buckwheat recipes over the years - see links below :)

2013 seems to be the year of the buckwheat, at least the year of the buckwheat becoming more and more  mainstream.

The Wall Street Journal started the year with Buck-Wild for Buckwheat, including a recipe for San Francisco's Tartine Bakery's buckwheat hazelnut sablés (January 4th, 2013).  The Kitchn praised it recently (Buckwheat: The New Baking Star, January 15, 2013, and Buckwheat for breakfast! 5 stunning ways to fall in love with buckwheat, February 26, 2013). The Guardian followed suit - one of the hottest chefs in Britain Yotam Ottolenghi shared his recipes for buckwheat polenta, and polenta and rice salad with dried cherries and hazelnuts (March 15, 2013). I'm sure more will follow.

Here's a simple buckwheat dish I love making for myself and the kids. Great way to use up leftover cooked buckwheat, though I admit I often cook buckwheat in order to have some left over for this particular dish. Note that it's vegan - and if you use tamari soy sauce, then it's also suitable for those avoiding gluten (buckwheat itself is gluten-free, despite the name).

Buckwheat with leeks and soy sauce
(Tatar porrulauguga)

Serves 4

Tatar porru ja sojaga / Buckwheat groats with leeks and soy sauce

2 Tbsp oil
1 large leek, white and pale green part only
400 g cooked buckwheat (just under a pound)*
3 Tbsp soy sauce, or to taste

Halve the leek lengthwise, rinse off any dirt, if necessary. Cut into thin slices.

Heat oil in a large non-stick frying pan/skillet over moderate heat. Add the leeks and sauté for a minute.

Turn up the heat, add the cooked buckwheat and fry, stirring constantly, until the buckwheat is heated through.  Season to taste with soy sauce and serve.

* To cook the buckwheat groats, heat some oil in a saucepan, add the groats and give them a quite stir for a few minutes. Add boiling water (the ratio is 2 parts groats to 5 parts water) bring to the boil. Reduce the heat, cover and simmer for about 15-20 minutes. Season to taste with salt and fluff up with a fork before serving. NOTE that I prefer buying raw groats - if you only have that dark kasha available, you can skip the toasting bit.
