A Mexican Sope, at first sight looks like an unusually thick tortilla with vegetables and meat toppings. The base is made from a circle of fried masa of ground maize soaked in lime, with pinched sides. Then it is topped with black beans, cheese, lettuce, onions, red or green sauce and acidified cream. Other than these, there is a lot of variety of ingredients that can be added according to the taste. Sopes being popular in all parts of Mexico, have a lot of regional variants as well. Each region has its own ways of preparing a sope according to the local available ingredients such as, traditional salsas and cooking recipes that give it a great regional taste.
The pinched sides of a sope are its most distinctive characteristics but there are also thick flat sopes resembling a thick tortilla.
